Mezon Tapas Bar & Restaurant in Danbury is teaming up with Danbury Hospital to host a benefit dinner, "Latin Cause. Latin Food. Latin Drink" at Mezon on Tuesday, May 13. All proceeds will support the Western Connecticut Health Network Global Health Education Program. The WCHN's GHEP charity supports healthcare services and overall community health in Paraiso, Dominican Republic.

Equal parts businessman and chef, Gopi Nair is the man behind New Haven's 'fast casual' Tikkaway Grill. The former managing partner of South Norwalk's Coromandel, he is a familiar face to Indian food lovers in Fairfield County and has thankfully extended his reach east to New Haven. His passion for Indian cuisine and dedication to customer service has inspired Tikkaway’s central tenants: a fresh, healthy, and informal take on Indian food.

"I have been thinking that to me the world has two sets of people," said Nair. "Those who love Indian food but can't get enough and more frequently, and those who don't know Indian cuisine and have stayed away from it till now! Tikkaway grill is for both of them."

Craft Butchery Dinner Party: Spotlight on Dinner #5 Spring Lamb

Each month Saugatuck Craft Butchery hosts an eight course dinner party paired with wine for twenty guests that highlights a different protein and Craft's pasture to table ethos. This approachsourcing whole pasture-raised animals from small to medium-sized farmsfollows what is often referred to as a nose-to-tail philosophy of utilizing the entire animal. These dinners are a celebration of this approach, a collaboration among the butchers and chefs at Craft, and a creative challenge for the Craft culinary team. 

"They are so talented that my challenge as an owner, is to keep their interest. These dinners are a creative outlet and they celebrate what the shop does. They use all parts of the animal, from snout to tail," said owner and head butcher, Ryan Fibiger. Selecting the themes for these dinners may be a team effort, but much of the culinary planning comes from Mark Hepperman, Craft's Resident Chef and a graduate of the Culinary Institute of America with over 20 years of experience. 

One of the previous events in this series was the "Spring Lamb Dinner" which utilized two thirty pound young lambs for eight courses sourced from Josef Meiller farm and slaughterhouse in Pine Plains, New York.


Battle of the Chefs to Feature Chefs Forrest Pasternack, Matt Storch, Jeff Taibe

The Battle of the Chefs returns to Ridgefield's Founders Hall on Sunday, June 1, 4 – 7 pm and will feature Chefs Forrest Pasternack of Bailey’s Backyard in Ridgefield, Matt Storch of Match in Norwalk, and Jeff Taibe of The Whelk and LeFarm.

In a culinary showdown similar to those featured on television shows such as Top Chef and Chopped, three seasoned chefs will match sharp knives and quick wits for the benefit of Founders Hall. The participating chefs, Pasternack, Storch, and Taibe, will compete to create an entree from a basket of surprise ingredients in front of over 200 people.

Chef Jeffrey Lizotte is the executive chef of Hartford's acclaimed ON20 restaurant and Connecticut’s only nominee for FOOD & WINE’s annual People’s Best New Chef award [you can vote online through March 31 at 5 pm].

A Connecticut native, Lizotte has been executive chef of ON20 since 2012. A graduate of Cornell's School of Hotel Administration, Jeffrey has worked under chefs David Bouley and Eric Ripert, and completed stages in France at the acclaimed La Tupina in Bordeaux, and the two Michelin-starred La Bastide St. Antoine in Grasse, France. In 2009, Lizotte returned to the nutmeg state as Chef de Cuisine at ON20, becoming executive chef in 2012. The same year, he earned a silver medal at the Bocuse D’Or USA and was awarded Valhrona Best Pastry while representing the U.S in the international culinary competition Trophee Passion.

Bick's Burgers Opens in Danbury

Bick's Burgers opened on Friday, March 7 on Ives Street in downtown Danbury. And while I will save the true burger review for our resident expert, Jeff, here is a very early look at what to expect from Fairfield County's newest burger joint from our quick stop on opening day. 

The Bick's Burger concept is fairly straightforward–a modern take on burgers, elevated with homemade touches, and delivered with a solid 75/25 burger. The business is a partnership between Chef Michael Bick of SomeThings Fishy Catering, and his entrepreneurial son, Ian Bick.

In a nod to its humble diner roots, Bick's embraces the décor of the 50's drive-in diner. A row of counter seating and stools faces the kitchen's flat top griddle, and a black and white checkered floor and red vinyl booths complete this homage.  

There are several homemade touches on the menu. Homemade buns, including brioche, truffle brioche and sesame

Moderated by Mark Bomford of the Yale Sustainable Food Project, this panel of entrepreneurs and authors will explore some of the ways that we can redesign our current food systems and how to develop the regenerative food systems of tomorrow.

There is a synergy that sets Matt Stanczak's Stanziato's Wood Fired Pizza in Danbury apart. The combination of a chef/owner with a sincere devotion to his craft, a respect for simplicity, a loyalty to local ingredients, and last but certainly not least, Matt's fearless and fun leadership, make the sum of Stanziato's greater than its parts.

Local Food Rocks captured the essence of Stanziato's perfectly in this behind-the-scenes video of how they build their fires (Jenga-style), what makes their pies so amazing (slow fermentation, good old Danbury water), and a couple trips to local farms you may recognize.

This talented duo behind the blog and RMedia.TV deserves its own shout-out. Alicia (passionate home cook and blogger) and Renato (the man behind the camera and guitar) Ghio are literally a rocking duo. Check them out.

Sarah & Monica's Excellent Birthday Dinner

Sarah Bouisseau of Bernard's & Sarah's Wine Bar in Ridgefield, and Monica Brown of 109 Cheese & Wine have been the closest of friends for over a decade, beginning when they discovered they shared the same birthday. Over the years, the oenophiles and food lovers have hosted an evening including some of their favorite foods and wines for their customers, and it has evolved into a beloved annual event.

Beach + Barn Opens in Branford

From the same folks that brought us Roomba and Tacuba, comes the shoreline's newest restaurant, Beach + Barn. The dynamic husband and wife team of Chef Arturo and Suzette Franco-Camacho have reimagined their space in Branford, re-opening their Main Street restaurant as a casual "country to coast" lunch and dinner retreat.

Their approach is "to create an everyday, neighborhood spot with great tasting, affordable food." After several years of running successful restaurants in New Haven, the couple moved to Branford. Beach + Barn is their thoughtful response to living and working within the Branford community for the past several years, and a distillation of what they believe was missing in the restaurant scene in the shoreline, and especially Branford.

A 13 course Nordic-inspired menu is the inspiration for Ny Haven, a one-time pop-up dining collaboration between chefs Marcell Davidsen and Tommy Juliano, that will take place at 116 Crown on March 3, 2014. Ny Haven is a play on words. In Danish, Ny means New, and Haven means garden. In Copenhagen, Nyhavn is a main gathering point for people to meet at cafés to eat and drink. 

The chefs, best known for their culinary risk-taking and locavore approach at Community Table in Washington, CT, will descend upon the kitchen of 116 Crown in New Haven for a single night for 25 lucky gourmands. 

"We are very excited to showcase our style of new New England cuisine, and Nordic influenced cooking, to New Haven," said Davidsen. "With my Danish background and Tommy's New England approach on desserts."


Loaf of the Week at Scratch Baking

Beginning on January 31, 2014 for 8 weeks, Scratch Baking in Milford will be kicking-off their second annual "Loaf of the Week" club. Participants, known as "the loafers," receive a surprise bread and spread each week, paired with a recipe. Think of it as a winter CSA for your bread box.

"It really is alot of fun and honestly it is perfect for winter time when you just want to curl up and fire up that crockpot," said Lesli Flick, Scratch owner and baker. 

Last year, Scratch's Loaf of the Week baked fresh loaves of brioche paired with a cinnamon raisin butter, ciabatta with pesto, and rosemary focaccia with a lemon curd. The cost to become a Loafer is $65 for 8 weeks of breads and spreads.

Connecticut's first Bareburger, the micro chain restaurant known for organic ingredients, grass-fed humanely-raised protein, and sustainable practices, opened this week in Ridgefield. CTbites tagged along on a Friends and Family earlier this week with fellow Ridgefielders and had the chance to meet its trio of partners, Bareburger’s chef, and taste a couple of their burgers (elk and wild boar, to be exact).   


10 Questions with the "Singing" Chef Neil Fuentes

Chef Entertainer Neil Fuentes (a.k.a. "The Singing Chef") was recently featured on the Food Channel giving audiences a tour of one of his favorite New Haven spots. Rubamba. We sat down with Neil to discuss his favorite ingredients, kitchen nightmares, and go-to dishes. 

1. If you had unexpected guests arriving at your home for dinner in one hour, what would you whip up?

One of the most effective recipes I like to make when I am in a rush is my Mustard Chicken, It’s fast, with deep flavors and really quick. I grab whatever I have in the freezer, chicken breast, chicken thighs, a whole chicken or whatever. I place the chicken in in a large soup pot! I put water until it’s covered with water. Put on the stove on high and covered. To that I add a 3/4 cup of good old yellow mustard. 1 tbsp of garlic powder, 1 tsp of worcestershire sauce, salt and pepper to taste. I let the chicken boil covered for 15 minutes. Then I uncover the chicken and keep it on high. The liquid will start reducing creating a super delicious sauce. One the sauce is thick I shut the stove off. At that pout I take the chicken off the pot and place it on a baking sheet with a rack and put it older the broiler in the oven until is nice and brown. I serve this chicken with a simple rice and sweet fried plantains.

Cooking with Fire: Fortina in Armonk

Cooking with wood fire has a preternatural, almost primal appeal. You could argue that as cavemen, it was our first foray into comfort food. The intense heat and smoke has the power to transform otherwise unassuming ingredients. The six-month old Fortina in Armonk, begins with this deceptively simple ethos–Italian food, cooked simply, in wood fired ovens–and elevates it with a thoughtful culinary execution and a familiar, if familial, disarming vibe.

There is a complexity to the simplicity,” said Rob Krauss, one of Fortina’s three partners along with John Nealon and Christian Petroni, nailing what makes the restaurant’s cuisine tick. I’m fairly certain Krauss is also referring to the restaurant’s team, an extended family of sorts that works equally hard at the food as they do cultivating the culture at Fortina

More than the sum of its wood-fired parts, Fortina relies on the culinary prowess and Italian heritage of partner and Executive Chef Christian Petroni, formerly of Barcelona Greenwich, as both muse and ringleader. “My background is Italian, I grew up spending summers in Ponza. One of my favorite restaurants is Peasant. As a young cook, Frank de Carlo was an inspiration as a chef. I was intrigued by cooking in wood ovens. There is something about it that is so gratifying. It’s a beautiful thing.” Along with chef de cuisine Jodi Bernhard, formerly of Barcelona, the kitchen has the creative chops responsible for its daily printed menu.

The first time I heard the phrase "Cannoli Truck" I was convinced it was a New Haven urban legend. The city has trucks and carts filled with almost any cuisine you can imagine, but a truck filled with Italian pastries? This seemed too good to be true. Lucky for New Haven, the truck exists, and its pink and leopard-trimmed reality is far superior to any Italian pastry-filled mirage you can conjure.

I discovered the truck early this summer, first as a hot tip from a New Haven friend excited to have a new truck to add to the city’s burgeoning food truck and cart scene. And then as luck would have it, the truck frequently parks in the neighborhood near my New Haven office, so I’m lucky to “stumble” into it, in all its 7 cannoli-flavor glory.

What do 18 vintage cars and a hundred miles of Connecticut and New York roads have to do with creating the perfect french country picnic? The short answer–everything. The long answer?

Each spring and fall, Matthew L. deGarmo, Ltd., a vintage automobile broker from Norwalk, hosts a series of fall tours for his clients and friends inspired by a shared passion for driving and the art of the automobile. “My passion for selling vintage sports cars comes from an even deeper passion for driving them. That sentiment is what gave birth to the rallies we organize... an opportunity to get these fantastic cars out of the garage and on to the open road where they belong.” said deGarmo. The rally welcomes cars no later than 1974 and often limits his rallies to about 15 cars per tour.


10 Questions with Captain Lawrence Brewing Company Scott Vaccaro

Barcelona Wine Bar in SoNo recently hosted a beer dinner with Captain Lawrence Brewing Company founder and brewmaster Scott Vaccaro. The four course dinner paired a spanish inspired menu designed by Chef Freddy Chimborazo, with four of the brewery's beers (and at $45 per person, this felt like a dine and dash). The meal went from light to heavy, beginning with a first course paired a grilled shrimp with lemon aoili paired with Liquid Gold, a Belgian Style ale, to a fourth course pairing smoked short ribs with a smoked porter. In addition to the four well-matched courses, the highlight of the evening was getting to know Vacarro, Captain Lawrence's amiable founder and brewmaster himself. 

1. How did you go from drinking Schaefer to brewing your own beer at the age of 17?

I stumbled upon home brewing at a friends house my junior year in high school. I was amazed that you could actually brew beer at home. I was given the green light by my parents and with the help of my friends father I brewed my first batch in November of 1995.

2. You studied brewing at UC Davis, and worked at a few breweries including Sierra Nevada. Are you inspired by a particular style or brewery when brewing your beers?


Yale's Foodtober Events Celebrate & Examine Our Food Culture

This October, the Yale Alumni Association of New York is co-sponsoring Foodtober, a month of food-related events and activities in NYC in association with numerous shared interest groups, alumni organizations, and community partners. These events are open to the public.

Touching on food culture, creation, politics, business, media, history and science, Foodtober uses food as a common thread to explore and share the great diversity of our community. These events, from small restaurant dinners in the outer boroughs, to an International Food Fight at the Yale Club of New York hosted by Jacques Pépin, will raise funds to support the Yale Sustainable Food Project and Just Food.
