Invites Recap: New Nordic Dinner at Chocopologie c/o Fritz Knipschildt

So what happens when creative and innovative chefs are given the chance to create a special dinner inspired by their homeland, Denmark and The World’s Best Restaurant, NOMA of Copenhagen??

Well…a 10 Course “New Nordic” Dinner with Fritz Knipschildt of Chocopologie presented by CTbites Invites, turns into a true culinary happening. I lost count, but 10 courses turned into 16 courses, each paired with local wines from CT, Upstate NY and Long Island and beers from local breweries; Southport Brewing Company and City Steam of Stratford. 

But first a little food history as Fritz explained the evening ahead.  In November 2004, on the initiative of the Danish chefs René Redzepi and Claus Meyer of the then newly opened NOMA restaurant, chefs and food professionals from all the Nordic countries met in Copenhagen to discuss how best to develop what they called the "New Nordic Cuisine." In particular, they sought to emphasize the need for what they described as "purity, simplicity, and freshness" as well as increased use of seasonal foods. Restaurants were encouraged to develop traditional dishes making use of ingredients benefitting from the local region's climate, water, and soil.

As Fritz stressed, this cuisine was taking the farm-to table movement one step further, by foraging the earth for unique flavors and ingredients by using fresh herbs, moss, edible flowers and burnt hay to enhance the flavors of each dish.  


CTbites Invites Recap: “Celebrate CT” Breweries BarQ Dinner

The funky cow print décor in the upstairs bar loft at Bob LeRose’s BarQ in Stamford was the perfect backdrop for the CTbites Invites celebration of CT’s Own burgeoning beer business.  

Representatives from City Steam in Hartford, Half Full in Stamford and Two Roads in Stratford were on hand to pour and explain the brewing process of over six different craft beers to an enthusiastic sold out crowd.

Tim, the Pitmaster at BarQ , took this opportunity to create a special and very creative dinner menu that BarQ calls “original” CT BBQ.  It was expertly paired with distinctive and unique tasting beers and included wood kissed sweet and sticky wings,  paired with City Steam’s Blonde on Blonde ale, smoky brisket chili cups served in mini cast iron skillets and paired with City Steam’s Naughty Nurse lager. Pulled pork and brisket sliders with touch of chipotle mayo, with Two Roads Ol Factory Pilsner and “Dueling ribs” meaty St. Louis Sticky and Memphis Dry Rub  with Two Roads, Roads to Ruin Double IPA.

The Awards Season is in full swing!  The Golden Globes, Sundance Film Festival are already old news…the Grammy’s just scored record ratings and now the anticipation builds for the “motherlode” of all awards… The 85th Academy Awards for Motion Picture, Arts and Sciences (also known as the Oscar’s ) airing on Sunday 2/24 on ABC.  And what better way to spend a winter evening than with Dinner and a Movie!

But, what if you don’t feel like braving the weather, the crowds or JUST can’t stand the smell of popcorn? How about staying in and watching a movie and ordering in or making dinner? Therefore, I offer you the CTbites,  “CANNED FILM FESTIVAL" with tasty recomendations for food focused movies in 4 categories: Food Flick Classics, Watch With Your Kids, Food Education, and Flicks For Wine Lovers.

With the snow piled so high in front on the Post Road, it could have been easy to miss Tabouli Grill in Southport… but  I was determined to join a spirited group for CTbites Invites Passover Cooking, so maneuvered my way around to the side parking lot and entrance. 

Chef/owner Judith Roll greeted everyone with hot coffee and her spongy homemade lemon cake as we were handed recipes for the morning's “hands on” cooking class in the Tabouli kitchen. (See Chef Judy's recipe for Bubbe's Brisket below.)

Chef Judy, who has traveled the world bringing authentic Middle Eastern cuisine to her two restaurants, in Stamford and in Southport, is passionate about what she prepares and had created a wonderful Passover menu for our entertainment and dining pleasure ( Passover is March 25-April 2 ).


"Play With Your Food" Launches 2013 Season!

Performing arts producer JIB Productions has announced its Play With Your Food program at Toquet Hall in Westport , on Jan. 15, 16 and17, Fairfield Theatre Company on Jan. 22, and at Greenwich Arts Council January 23 and 24th

Now in its 11th season, PWYF is a theater program that includes a seasonal buffet lunch and dessert, short-play readings by professional actors and a post-show discussion. Performances are held from noon to 1:30 p.m. on dates in January, February, March and April.  

January’s lunch in Westport and Greenwich will be catered by Norwalk’s Nicholas Roberts Gourmet Bistro, and will feature Chef Robert Triolo’s seasonal lunch roll ups: Butternut Squash & Honey, Ginger Truffle Tuna Salad, Chicken Salad w/ Sage, a Sweet Potato salad w/ Mixed Greens & dried fruit.


Downtown Westport Foodie Fest Recap

With Hurricane Sandy bearing down on the Northeast, the FIRST Downtown Westport Foodie Fest truly offered the “FUN before the Storm,” during the weekend of October 26th. Over 1000 attendees came out to enjoy the picture perfect Fall weekend and sample craft beers, attend wine and foodie events and stroll Westport’s scenic downtown along the shores of the Saugatuck River.

Foodie Fest featured unique food, wine and beer events throughout downtown Westport and was presented by Westport Downtown Merchants AssociationCTbites and The Sunrise Rotary, with a portion of the proceeds benefitting local non-profits, Connecticut Food Bank, and Homes With Hope thru a Food Drive sponsored by Westport Farmers Market.

The featured event on Saturday was “Biergarten On The Green,” on Veterans Green, a tasting tent of over 30 local craft beers


Re-visiting Brasitas Latin American Cuisine in Norwalk

Just as the crisp Fall air reminds us that winter is around the corner, Brasitas in Norwalk (and the original location in Stamford) transports us to the warm Caribbean or to sunny South America.

Colorful in tropical hues of marine blue, coral and yellow, the decor of Brasitas feels very much like a Caribbean beach front café…as authentic native art from Colombia, hand picked by owner Jaime Guerrero and his wife, Nubia, adorn the walls, and brightly colored embroidered pillows line the banquettes. Two to three times a year the husband and wife travel to their native Colombia in search of new recipes and native art.

The Norwalk location, opened in 2008, is managed by Jaime’s nephew, Fabio Rojas, and has a loyal following among lovers of authentically prepared and beautifully presented Pan-Latin cuisine.

Keep a eye out for these happening in the next few months.

For those not yet familiar with our Invites series, CTbites partners with chefs and restaurants all over Fairfielld County (and beyond) to bring our readers innovative culinary-minded events, with behind-the-scenes access and exclusive experiences on some of the most interesting culinary happenings in the region.  This past year we hosted over 40 Invites with over 1000 “foodie” attendees! We believe life is too short for bad food. 


AMG Cooking School in Wilton: Learn While You Eat

It must have been good karma to take over the former Wave Hill bread kitchen in Wilton, because the AMG Cooking School, which opened it’s doors in July, has truly found the right ingredients for success. 

Alison Milwe-Grace and her partner, Olivia Savarese, are not new to cooking having run a catering and event planning business for years. When the professional kitchen space at the old Wave Hill Breads came on the market, they saw an opportunity and jumped at the chance to open a cooking school. They have been hosting both adult and kids classes ever since.

The good friends added their own personal touch to the space. Gone are the wooden bread racks and flour dusted floors. A cozy candlelit living room and dining area serves as the entrance, while the kitchen features a huge work area complete with famous chef quotes on chalkboards to serve as inspiration.

A few fun facts on sushi... originally the seasoned rice found in sushi was used only as a preservative for the fresh fish in China...not Japan;  Sushi chefs (mostly men, huh?) used to train for ten years before being able to work in restaurant...while now they train for about two years; The Japanese eat miso soup AFTER the meal to aid digestion...not before as in America. 

The history of sushi and some hands on technique for making maki, or sushi rolls, were served up at the CTbites Sushi Making Class at Matsu Sushi on November 16th.
