It’s National Burger Month. To kick it off, we are launching a series of haunts and restaurants where you can enjoy some excellent burgers. For the first of this series we bring you the “Burgers of Stamford.” From basic bacon cheeseburgers to one with 100% Wagyu beef, each of these bundles of beef offers different flavors, toppings, buns and sides

Last year one Stamford location was included in the 2013 Best Bar Burger category, Dinosaur BBQ’s “Dino Burger Deluxe." Check back next week when CTbites rolls out its 2014 list of Best Bar Burgers. Two Stamford locations earned spots in CTbites’ 2013 Best Restaurant Burger category. The “Harlan Burger” at Harlan Social and Napa & Co.’s “Wagyu Burger.” We recently reviewed a strong contender for inclusion in this year's list with Olio’s “House Burger.” Check out Olio’s burger here, and come back at the end of the month when we unveil “The Best Restaurant Burgers in Fairfield County.”


New Chef @ Barcelona (SONO) : Introducing Chef Wayne Homsi

With a hip and lively environment, the Barcelona restaurants have consistently offered bold cuisine, inspired by the Iberian Peninsula accompanied with some of the best drinks and Sangria in the area. Each location adheres to the basic premise that a visit to Barcelona must combine great fun with great food. To continue in this tradition, Barcelona (SONO) recently introduced its new Executive Chef Wayne Homsi. Fresh from his culinary journey throughout Spain, CTbites stopped by to sample Chef Homsi’s new additions to the Spring menu.

Chef Wayne graduated with honors from the Culinary Institute of America in Hyde Park and joined The Waldorf Astoria Hotel where he became the youngest sous chef in its history. He subsequently worked at Picholine and then became the opening sous chef at its sister restaurant Artisanal Fromagerie and Bistro in New York. He next joined Il Barilotto as Executive Chef and Partner in 2002 before joining Barcelona SONO earlier this year.

The menu at Barcelona offers “Meat + Cheese,” “Tapas” plus a few smatterings of “Paella,” “Meat + Fish” and Mixed Grill.” The Tapas contains bar bites and others that are more closely described as small sharing plates.


Harlan Publick to Open in SONO: From Harlan Social Owners

There is a lot of activity in SONO on the northwest corner of Washington and Water Streets...and this is great news for CTbites readers. Harlan Social’s Managing Partner, Chef Stephen Lewandowski informed CTbites that Harlan Publick, the first sister location to Stamford’s Harlan Social, will open by mid-June. Branded as a less formal sibling, Harlan Publick will feature “global inspired street food” in an atmosphere dedicated to “hanging out, enjoying friends, having a good time and enjoying incredible food.”

Chef Lewandowski described his vision for his new restaurant in an exclusive interview and walk-through with CTbites. Harlan Publick will feature approximately sixty seats in the dining area and another forty-plus in the bar, with the interior space having a “very industrial feel, like a public tap house with lots of exposed wood trusses, three long communal tables, and reclaimed glass panels encasing chicken wire hanging from the ceiling to separate the bar and dining areas.” It will also feature the “Tap Room,” a private room with eighteen seats, three beer taps installed in the wall, and a large screen TV. Reserve the room for a private function or a Sunday sport’s event, choose three beers and pour your own.


Olio's "House Burger" - Excellent in Springdale

In my constant search for great burgers in Fairfield County I found myself heading to Stamford to sample the new lunch menu at Olio that includes the Olio House Burger. And I am glad I did. Olio recently began serving lunch and it is slowly turning into the go-to location for many locals. The lunch menu includes a soup a few salads, and several sandwiches from chicken salad to steak, plus a pasta and sautéed shrimp. But I was there for the burger.

The Olio House Burger is a unique combination of flavors and ingredients. It starts with a thick all-beef patty topped with Tasso ham, melted Manchego cheese, caramelized Cipollini onions, with a schmear of roasted tomato aioli, all encased in a Brioche roll from Eli’s. It is served with thick steak fries and a side of ketchup.

The burger is excellent.


The NEW Versailles Bistro & Patisserie in Greenwich - From the Owners of Méli-Mélo

Almost a year ago, without notice or forewarning, a “For Sale” sign appeared on the window of Versailles Restaurant in Greenwich. At 6:15AM the following morning, Marc Penvenne was driving his usual route down Greenwich Avenue to his restaurant Méli-Mélo when he saw the sign. A few months earlier he started looking at several locations to open a second restaurant and now Versailles was available; he now knew the perfect location. Twenty years earlier, Penvenne was the manager at Versailles and left to open Méli-Mélo with his wife, Evelyne. Now, Marc and Evelyne are the proud owners of both Méli-Mélo and the re-invented Versailles Bistro and Patisserie.

When you enter the reimagined restaurant, the front area is a patisserie, complete with white marble-topped tables, bistro chairs and glass display cases filled with tantalizing pastries. Behind these cases is a coffee bar, serving some of the best café au lait in Greenwich. In the rear, the patisserie opens to a restaurant with bistro style dark wood tables and chairs plus a long leather lined banquette. The walls are adorned with photos of Paris and framed French posters dating from the first half of the 20th century.


Eleven 14 Kitchen - A Delightful Journey into California Cuisine

Eleven 14 Kitchen is a beautifully designed restaurant offering deliciously prepared cuisine. Reminiscent of the California culinary experience that accentuate the natural flavors of each of the ingredients, the menu offers meats, fish and poultry in artfully composed presentations.

The stunningly designed and decorated restaurant is located in the J House Hotel in Riverside, Greenwich. The front area contains a U-shaped marble topped bar with leather covered bar stools and several chandeliers cast an inviting light to socialize and drink beers and specialty cocktails. The rear of the space is dedicated to the dining area, with 100 seats plus a new outdoor patio that will be ready for dining al fresco this summer. The ambient lighting is soft from the cloth cover lighting over the rear tables and the entire room is lit from the center chandelier with low lights. The décor is relaxed, and stylish.

Overseeing the kitchen is Chef Francois Kwaku-Dongo, a native of the Ivory Coast who spent fifteen years as Wolfgang Puck’s Executive Chef at Spagos Restaurants


Napa & Company Gets a New Chef: Adam Truelove at the Helm

Since opening in 2006, Napa & Co. has received numerous accolades as one of the best restaurants in Connecticut with a creative and inventive menu. Co-Owner Mary Schaffer told CTbites that her vision from the start has been the “wine country cuisine of Northern California…flavorful, fresh, simply prepared food with its roots based from the European influence of wine growers coming to the area from Spain, France and Italy over the last 100 years.” The restaurant prides itself on “blend(ing) the cultures” of various cuisines. Schaffer also has a keen eye for culinary talent and last year she hired and handed oversight of the kitchen to Executive Chef Adam Truelove.

Chef Adam earned a degree in Mathematics before following his culinary passion and enrolled at the French Culinary Institute in Manhattan. After graduation, he honed his skills at Town and Esca Restaurants before returning to the FCI as a Chef Instructor. He relocated to the Fairfield County area as the opening Sous Chef at Tarry Lodge in Port Chester, the Executive Chef at Pine Social in New Canaan and eleven 14 Kitchen in Greenwich as the Chef du Cuisine. Last year Napa & Co. reached out to Chef Adam and asked him to join its team to oversee the kitchen as Executive Chef.


Bonnat & Pralus Venezuelan Chocolate Tasting Re-Cap

Spending Valentine’s Day with your sweetheart is fantastic, tasting and learning about great chocolates with your sweetheart is even better. While many were eating at restaurants, enjoying romantic dinners at home, or enjoying a concert or sporting event, a group of chocolate novices and enthusiasts met at Olivette Oil in Darien and were educated on the finer points of high-end chocolates by Analiese Paik, trained chef, chocolate aficionado, and Editor of The Fairfield Green Food Guide.

The table was pre-set with five different chocolates, a rating card and a flavor wheel. Normally, the chocolates would have disappeared in a nano-second but the group was instructed to sit and relax. Analiese presented an incredibly detailed and comprehensive overview of the process that converts the bean pods of the Theobroma cacao (“food of the Gods”) tree to chocolate. All of the chocolates that we would sample were from Venezuela and included Bonnat Puerto Caello, Bonnat Chuao, Bonnat Hacienda El Rosario, Pralus Venezuela, and Pralus Chuao.


Graham Elliot's Primary Food & Drink Opens in Greenwich: Outstanding & Creative Cuisine

Primary Food & Drink, the newest member of Master Chef Graham Elliot’s expanding restaurant group, opened in Greenwich this past December under the direction of Executive Chef and Managing Partner Merlin Verrier. The restaurant is serving some of the most innovative and imaginative interpretations of traditional recipes using unique combinations and ingredients.

With six Michelin stars in his portfolio, Chef Verrier worked under several of the great chefs in America. His culinary experience included stops in his native California, Oregon and Colorado where he was eventually noticed by James Beard Award winner Chef Jennifer Jasinski and promoted to Sous Chef at her Rioja Restaurant. His travels brought him to Chicago in 2008 where his business relationship with Chef Elliot commenced. One month after joining Chef Elliot, he was promoted to Sous Chef and a year later he was overseeing the kitchen as Chef du Cuisine where he received his first Michelin star. Chef Verrier now brings his magical cuisine to Fairfield County.


Rincon Taqueria in Norwalk- A Hidden Gem in Plain Sight

Rincon Taqueria is the epitome of a hidden gem.

The exterior is fairly non-descript and the interior is one large, open space, but the food is delicious. As you enter there are tables for twenty patrons to the left and behind these tables is a long glass deli case containing large baskets and bowls filled with several varieties of chili peppers. Along the right wall are three six-foot tall refrigerators with bottles of soda, home-canned items and take-away containers, including homemade apple sauce, beef and vegetable soup, cassoulet with duck and pork, duck confit. Taqueria?

The young lady behind the counter asked if I needed assistance. I looked at the wall behind her and saw two large hand-written chalkboard menus with more traditional taqueria fare…Huevas Rancheros, Burritos, Chilaquiles, Tacos, Empanadas, Tamales and a Chicken Quesadilla. I ordered a trio of tacos…a fried fish, a beef and a pork. As it turns out the young lady is one of the owners, Maria Munoz Del Castillo.

As I waited, Maria brought a plate of Frijoles con Arroz. In addition to the slightly spicey rice and black beans, the dish contained a few green beans, corn, scallions, diced red onions and cilantro. It was a very pleasant way to wait for my meal.


Barolo Trattoria and Wine Bar Opening in New Canaan on February 19

A few weeks ago CTBites announced the anticipated opening of Barolo Trattoria and Wine Bar in New Canaan and we are pleased to announce that Barolo will open its doors to the public on Wednesday, February 19th. Under the ownership of Rafaelo Gallo, Erick Grant, and Gary Weinstein, Barolo will offer a relaxed atmosphere in its Antipasti Bar or a slightly more formal approach in its dining room. Roe Duva, the long-time owner of Bistro Bonne Nuit is also a member of the family. Overseeing the kitchen is Executive Chef Giuseppe Castellano. Born and raised in Naples and Giugliano, Italy Chef Castellano trained throughout Italy and then worked throughout Italy before moving to the US. His recent experience includes Gran Gusto in Cambridge and Tiella Restaurant in NYC.  He told CTBites, “We will focus on the Piedmont style on the menu.” Given Chef Castellano’s southern Italian roots and his desire to create northern Italy cuisine, the opening menu is designed for the full Italian culinary experience.


Morello Italian Bistro in Greenwich: Beautiful Food in an Exquisite Setting

Morello Italian Bistro is architecturally one of the most beautiful restaurants in Connecticut and offers equally fine cuisine. The exquisite interior of the landmark building on Greenwich Avenue was designed by Rafael Guastavino, Jr, whose father invented the golden amber tile vaulting system that grace the pillars, herringbone arches and ceilings. Art adorns the walls, and the soft, hand blown white tear-drop shaped glass chandeliers, descending from the ceiling create a beautifully romantic atmosphere for dinner. As we worked our way through appetizers, pastas, entrees and desserts General Manager Jimmy Branigan, Jr. was the perfect host, stopping by the table on several occasions to explain the composition of many of the courses and offer suggestions from the reasonably priced wine list.

While we leisurely perused the menu, we enjoyed the “Prosciutto & Parmesan Fritters.” The large fritters delivered complementary textures and flavors. The crisp exterior was offset by the marvelously smooth interior, which presented a delicious combination of prosciutto and Fontina cheese. The dish was finished with a sprinkling of Parmesan cheese which added the perfect level of saltiness to the fried exterior. An order or two for the table is an excellent way to start the meal. 


Sneak Peek at F·I·S·H Restaurant Coming to Stamford

The finishing touches are being applied to F·I·S·H Restaurant in Stamford as it prepares for its grand opening in a few weeks. Housed in the space formerly occupied by Boca Restaurant, the staff is busily preparing to change the focus from small plates to one focused on more traditional offerings of seafood with a smattering of meats and poultry.

Overseeing the kitchen is Chef Domenico Gurliacci, who also directed the kitchen at Boca. Prior to joining Boca, Gurliacci prepared some delicious Greek cuisine at Kouzina in New Canaan and was a cook at the Restaurant at Rowayton Seafood. As Gurliacci told CTbites, “There were too many restaurants in Stamford offering the small plate concept. We wanted to change it up a bit.”

The menu is designed to appeal to both the lunch crowd as well as those at dinner and features a varied approach. Guests can choose from several Raw Bar offerings or one of the appetizers that range from Lobster Corn Chowder, mini fish tacos, and mini beef empanadas to traditional seafood appetizers of fried calamari or oysters, plus Asian inspired mussels and spicy buffalo shrimp. Sandwich choices include Oyster Po-Boy, Buffalo shrimp, Crab cake BLT, Steak and Gorgonzola and the F·I·S·H burger. Entrées consist of several pan-seared or grilled fish options or F·I·S·H’s modern comfort food interpretations of ricotta gnocchi with lobster; beer battered fish & chips; seafood gumbo and spaghetti with clam sauce.


Locali Pizza Bar + Kitchen Opens in New Canaan

Clean…Balanced…Flavorful…

Three words to describe the outstanding cuisine that Locali Pizza Bar + Kitchen, the latest addition to New Canaan’s Restaurant Row. This twenty-eight seat restaurant / pizza bar is already making its mark on the culinary landscape of New Canaan.  

Executive Chef Mogan Anthony and his team are creating vibrant flavors and textural contrasts in many of their dishes, intermingled among other selections that are pleasantly soft and mild.

The interior design, with a strong focus on organic materials, creates a cozy and inviting environment with guests choosing between table or bar seating. In full view of the dining and bar area is the beautiful, hand-crafted ceramic encased Stefano Ferrara wood-fired brick oven.

Joining Chef Mogan in the kitchen is Chef de Cuisine Ruben Liriano and Chef Antonio Legato oversees the wood burning pizza oven. Chef Mogan gained his training at the Four Seasons Hotel in Singapore and subsequently under Chef Jean Georges Vongericthen in three different locations, plus the Bedford Post and Village Social in Mt. Kisco.


Bar Sugo in Norwalk 2.0: Enter Chef Paul Failla

Slightly more than a year ago, restaurant Bar Sugo opened on Wall Street in Norwalk featuring a variety of owner/Chef Pat Pascarella’s fantastic pizzas, meatballs and delectable pastas. Pascarella recently handed the reins of the day-to-day culinary oversight to Chef Paul Failla, and CTbites re-visited to taste Chef Paul’s cuisine and his creative spin to the menu.

Chef Faillia attended the Culinary Institute of America in Hyde Park before accepting a position at Burger Bar in South Norwalk. His culinary training continued at Dolce in Norwalk, The Atlantic Grill in Manhattan and The Saltwater Grille in Stamford, where he met Pascarella. He subsequently worked with Chef Dan Kardos at The Whelk and was one of the opening chefs with Chef Kardos at NOLA Oyster Bar.

When Pascarella first approached Failla about joining Bar Sugo, he was looking for a successor to continue his vision of “food that Italians eat every day” while allowing the new chef to add his individual flair to the dishes.

The Scene – Sitting at a red light at the intersection of Cross Street (Route 1) and Main Street (Route 123) in Norwalk. One of my favorite lunch spots, Nicholas Roberts sits vacant over my left shoulder. On the northeast corner a converted Meineke Shop with a hand-made sign indicating it was now a CT Inspection site (I thought we did away with those). But there was something calling me into the lot, a brightly painted food truck…and a good number of customers eating and ordering at its side window.

The Decision - Sometimes you just gotta go with your gut and give into temptation. So I pulled in, approached the truck and looked at the menu…Tacos, Quesadillas, Burritos and Tortas. I looked at all of the plates that the others were enjoying and they were overwhelmingly tacos, and it appeared that four occupied each plate. Go with the flow... so I ordered beef, pork, tongue and head, all for $7. Included in the price were a small container of green sauce, a few lime wedges and a whole Jalapeño pepper.


Post 154 Opens in Westport in Old Post Office Building

CTbites recently attended a press dinner at Post 154 in Westport to sample numerous selections from its award winning Chef Alex Rosado's introductory menu. Overall the dishes were visually artistic in their construct and many presented delicious flavors.

All reviews of Post 154 must include a little history of the building. The 1935 cornerstone outside the entrance commemorates the site’s original purpose as the Westport Post Office, constructed under The New Deal during the Great Depression. Architect Lansing Colton Holden Jr., a World War I flying ace who was awarded the Distinguished Service Cross, designed the building upon his return from battle. The building’s new ownership redesigned the spacious interior with a combination of wood paneling, flowing drapes and relics from the early 1900’s surrounding the tables. A large U-Shaped bar, with over 250 seats, occupies the entire left side and leads to an inviting patio that allows for al fresco dining in warmer weather.


Sneak Peek at Eclectic Luncheonette in New Canaan

A stop at the newly opened Eclectic Luncheonette and Catering on Vitti Street offered a glimpse into the cuisine that owner/chef Robert Milano will bring to the east end of downtown New Canaan. The periwinkle exterior adds a bright, southern feel to this residential-commercial street; an inviting beginning to any visit. The interior is more sterile, offering 22 seats and a long counter where orders are placed.

The lunch menu consists of various salad combinations, sandwiches with melted cheese, soufflés and desserts. Most tend to include fried ingredients or cheese so be careful if you are looking for a lower caloric lunch; you can create your own salad from a list of a dozen ingredients.

My lunch started with a cup of the house made “Tomato Bisque.” The tomato-ey flavor was rich and delicious, the texture was silky from the addition of cream, and the diced scallions added a nice crunch with just a touch of spiciness.


Locali Pizza Bar and Kitchen to Open in New Canaan

The intersection of Locust Avenue and Forest Street in New Canaan will be in full restaurant mode again in a few weeks when Locali Pizza Bar and Kitchen, a tribute to Napolitano pizza and small plates, opens in the space that formally housed Kouzina. The restaurant is brainchild of Joe Bueti, whose previous restaurants include 121 in North Salem, Strega in Pleasantville and his current location in Mt. Kisco, Village Social. Bueti is teaming with business partner Anthony Legato in this new venture. Overseeing the kitchen is Chef Mogan Anthony, the current chef at Village Social, and a former participant on “Chopped.” Chef Mogan’s background includes working under Chef Jean Georges Vongericthen in three different locations and a stint at the Bedford Post under New Canaan elm restaurant’s Chef Brian Lewis. The redesign is fully in process and their aim is an inviting, more intimate atmosphere that will deliver classic food and Neapolitan dishes.

What a great day at the Greenwich Wine + Food Festival presented by Serendipity Magazine wondering around the grounds, sampling food and wine from 100 different restaurants and wine shops, chatting with chefs, owners and fellow food lovers and listening to the chef interviews in our CTbites’ Blogger Lounge. Fairfield County chefs were well represented and each did our little neck of the culinary world proud.
