The National, the newest restaurant from celebrated chef, restaurateur, TV host, author, and philanthropist Geoffrey Zakarian, is now open in the heart of downtown Greenwich, at 376 Greenwich Avenue.

We were invited to sit down with the chef just 24 hours after he opened the doors to the public. Sitting in a corner banquette, our candid conversation spanned his 30-year career, including his love for Greenwich, formative culinary influences, and his advice for aspiring chefs.

The National feels like an extension of Zakarian himself. They both exude a studied yet casual New York elegance, are utterly charming, and yet quite approachable. A former Greenwich resident, it is no surprise he chose to open the restaurant within this community he knows so well. The modern american bistro feels at home on the Avenue and inside, boasts the welcoming charm of a neighborhood café with a seasonal menu positioned to please.

After a bloggers’ tasting at Paloma in Stamford’s Harbor Point, CTBites sat down with Chef de Cuisine Chris Bateman to review the menu -- and his creative relationship with celebrity chef-owner Aarón Sánchez.

Bateman is a culinary prodigy. Fresh from CIA, the young chef opened Four Seasons Restaurants and Hotels around the world. So debuting Paloma last summer wasn’t his first big time rodeo. Sánchez may be its star, but Bateman runs the day-to-day show.

We wondered how much the celeb is involved in the creation of Paloma’s menu. “Very much,” Bateman replies. “We work closely. But he’s wide open to my ideas, and listens really well.”   The unshaven, still youthful chef, sporting jeans and a Yankee cap worn backwards, confides, “Aarón is the reason I’ve stayed here.  I love cooking with him.”

News from Campagna Restaurant at the Bedford Post Inn...it is partnering with the Altamarea Group and Michelin-starred Chef Michael White. Joining Chef White at Campagna are Executive Chef PJ Calapa, the former chef of Ai Fiori and Costata and Chef di Cuisine Devin Bozkaya, whose experience includes the outstanding Inn at Little Washington in Virginia.

The upscale sister to The Barn, the menu will focus on Chef White’s world renowned Italian cuisine with a few American twists to adhere  to the surroundings of the 19th Century Bedford Post Inn.  The menu features incredible options including pork shoulder ravioli with cacio e pepe; risotto with Barolo, short rib, and bone marrow; pan seared halibut with sunchokes, caponata, artichokes and salsa verde and a filet of beef with bone marrow crust, pomme puree and porcini sugo.

I never thought “gourmet” and “Mexican” belonged in the same sentence. Until I had dinner at Zarela's, a Mexican restaurant which had just opened on Second Ave. back in 1987.  A revelation!  Zarela Martinez orchestrated textures and flavors just as artfully and lovingly as the new chefs who were redefining Manhattan’s food scene.  Zarela’s fast became the Nobu of Mexican food, one of the hottest spots in town. There,  I learned the magic of mole and the enchantment that truffles could lend to an enchilada.  

A generation later, Aarón Sánchez, the Food Channel’s charismatic Mexican rock star chef, hopes that his new Stamford restaurant Paloma (opening Monday, July 21st, in Harbor Point) will similarly introduce Connecticut to the fire and the finesse of fine Mexican and Latin American cuisines.  Revelations run in the family --  Aarón  (pronounced "AH-rone") is Zarela's son.

For all his celebrity, Sánchez feels he remains not only in his mother's debt, but also her shadow.

"I honor her because she did it first," he told us when we chatted last week, a comfortable conversation marked by his humility and respect.

"I believe family is at the center of the Mexican experience."

Graham Elliot's Primary Food & Drink Opens in Greenwich: Outstanding & Creative Cuisine

Primary Food & Drink, the newest member of Master Chef Graham Elliot’s expanding restaurant group, opened in Greenwich this past December under the direction of Executive Chef and Managing Partner Merlin Verrier. The restaurant is serving some of the most innovative and imaginative interpretations of traditional recipes using unique combinations and ingredients.

With six Michelin stars in his portfolio, Chef Verrier worked under several of the great chefs in America. His culinary experience included stops in his native California, Oregon and Colorado where he was eventually noticed by James Beard Award winner Chef Jennifer Jasinski and promoted to Sous Chef at her Rioja Restaurant. His travels brought him to Chicago in 2008 where his business relationship with Chef Elliot commenced. One month after joining Chef Elliot, he was promoted to Sous Chef and a year later he was overseeing the kitchen as Chef du Cuisine where he received his first Michelin star. Chef Verrier now brings his magical cuisine to Fairfield County.

Mohegan Sun’s annual WineFest is my Super Bowl.  Before the big game, football aficionados took to twitter in anticipation of the showdown.  I, too, waged a full out blitz on social media- enthusiastically counting down til I could try some great wines and see my favorite chefs back in action!  For the Super Bowl, avid fans suited up in team apparel and NFL jerseys.  I also donned some fancy getup; my yearly uniform is a pink shirt bedazzled with “Wine Diva” and a sparkly headband.  Some people love calfskin; I love food, wine, and fun.

From the moment I entered the Convention Center, it was apparent that this year’s festival was bigger than ever.  Media members are granted an additional hour to peruse the venue.  Last year there was a handful of us and it was easy to get a preview of what was to come.  This year, however, it seemed that people everywhere were vying to cover the event.  Media members were elbow-to-elbow before the doors even opened to the public.  It was an extravaganza!

The SunWineFest’s signature event is its Grand Tasting, which spans the weekend.

Like Oprah or Madonna in pop culture, Lidia is one-name-famous to foodies,  a television star  (Lidia's Italy -- PBS), renowned restaurateur (Felidia, Eataly, Delposto, Becco), a worldwide brand  (Lidia's Sauces and Pasta), bestselling author (Lidia’s Commonsense Guide to Italian Cooking is her latest), mom, grandmother, whew,  one name so many roles. 

So CTBites was delighted that Lidia carved out time from her hectic schedule to chat with us prior to her book signing this Saturday at Stamford's Fairway Market (details below.)

Incidentally, Lidia is no stranger to Connecticut.  Her son Joe and his family live in Greenwich, she tapes her PBS show in Norwalk, and of course the Bastianich clan is associated with Tarry Lodge in both Westport and Port Chester. 

We began the conversation, wondering what Lidia the little girl would think if she could peer into a crystal ball and see the famous Lidia of today.   

“When I was nine years old we had fled from Communist Yugoslavia and my family was in a refugee camp,” she told us, “I think that little girl, her mouth would be open at what I’ve accomplished.”   Then Lidia thought about that youngster for a moment and resolutely stated, “But you know, I always had confidence I was going to amount to something   And food was so very important to me, because we didn’t have much.”

Buddy Valastro, the star of TLC’s Cake Boss and owner of the famous Carlo’s  bakery, is opening shop in Greenwich, CT, this fall. He talks to Serendipity about  the sweet life and what to expect at the new site: delicious pastries, over-the-top cakes, and maybe even tv cameras!

Why did you choose Greenwich for your first Carlo’s Bakery out of New Jersey?
I love it here, it’s a great town. I’ve really enjoyed the time I’ve been able to spend here. There’s so much to do on Greenwich Avenue, and so many families in the area. I knew it would be a great fit for the first Carlo’s Bakery outside of New Jersey. I have friends who live in the Westchester area, so I’ve been able to get to know the area better when I visit them.

Everyone wants to know — will you be working at the new bakery?
Of course, I’m going to be there as often as I can. I’m a hands-on person, and it’s very important for me to make sure that our Greenwich location will meet the same standards I’ve built for Carlo’s Bakery. So, I’ll be here to make sure we’re running smoothly.

It was the calm before the storm.

As I strolled into the SunWineFest before the doors opened to the public, the ballroom appeared almost peaceful.  Exhibitors casually erected their stands and freely moved about the space.  Within an hour, that all changed.  People stood packed shoulder to shoulder and attempted to elbow their way through the throng for tastes of wine.  The crowd surged with energy, and my heart raced with excitement.

For some, the Mohegan SunWineFest is one giant party: an excuse to get buzzed with friends, blow off steam, and sample as many wines as physically possible.  For others, the event is a valuable opportunity to find exceptional bottles. 


Bistro Latino: Chef Rafael Palomino Comes to Old Greenwich

Acclaimed chef, author and restaurateur Rafael Palomino recently opened Bistro Latino in the space first occupied by Boxing Cat Café and then Greenwich Tavern in Old Greenwich.  The vast dining room has been done over in dark wood flooring which is flanked by racked walls that flaunt an extensive portfolio of international wines. 

Palomino won his food-star stripes when he opened Sonora in Manhattan almost two decades ago, introducing Manhattan to Nuevo Latino cuisine, and earning raves from the city’s food critics. Sonora's wild success inspired Rafael to bring his unique cooking style to satellite restaurants in New Haven, Tuckahoe, and Bethlehem, Pennsylvania.  Sonora now lives in Port Chester.

Despite its name, Greenwich's Bistro Latino is not really Nuevo Latino since the dishes are more of Spain than Latin and South America.  Rafael has created a menu that features European tapas and paella -- which he anoints with flavors from his Columbian and Queens roots. "Spanish bathed in Picante Style," is how the restaurant describes it.  As a result, Bistro Latino is really more about invention than tradition.
