Taproot & Redding Roadhouse Owners Take Over The Holbrook Farm Business

Features CT Farms Farm Fresh Local Farm CSA Bethel Farm Stand

Maddie Phelps

More than 40 years ago, John and Lynn Holbrook purchased 12 acres of land in Bethel, Connecticut to open their very own family farm. With a mere 2 acres available for farming, the Holbrooks were tasked with maximizing space while remaining environmentally friendly. The rest is history.

While the Holbrooks still own the spectacular farmland, as of this past March, four new faces have joined the farming family. Jeff Taibe, Stephanie Sweeney, and Sean and Erin Reilly decided to tackle the business side of things when the previous tenant opted not to renew her lease. With Taibe and Sweeney owning their restaurant, Taproot, and the Reilly’s owning the Redding Roadhouse, the four decided to merge the Bethel and Redding communities with Holbrook Farm as their link.

We are only a few short weeks into this brand-spanking new year, and TVs are blaring with eating program ads, magazine covers are screaming about how to “Lose 10 lbs. in a week!” and gyms are overflowing with people running for their lives on treadmills (Run, Forrest, Run!). Naturally, the CTBites answer to the holiday indulgences? EAT! Ok, ok…eat…HEALTHILY! Our fair state is brimming with amazing grocers, restaurants, and speciality stores that can help you get back on track after a season of going full-tilt boogie with the eating and drinking. The best part is that everything is so delicious and interesting. Branch out this year and try some new flavors and foods…goji berries, Matcha, Cauliflower pizza crust (wha!), Jackfruit! Dive in and explore. Here are some venues that will help you do just that. One more note: We fully realize that due to the sheer amount of noteworthy establishments, we are not able to list them all here. Please refer to our past Healthy Eats roundups for more listings and also, please chime in with places that you know and love. The more the merrier!

After nine years, EMBODY FITNESS GOURMET has a new location in Darien, at the Palmer’s Market Shopping Center (380 Heights Road). This is one of three Embody grab-n-go healthy organic locations; the others residing in New Canaan and Westport.

Embody is our go-to spot for protein shakes, juices, and salads. In Darien, they have also started serving Intelligentsia coffee--one of the top coffee roasters in the country. Embody's menu embraces all forms of lean proteins and nutrient dense vegetables and fruits in their menu creations, many of which pair well together allowing customers to mix and match items for an entire day's worth of nutrition. My personal favorite...The Almond Buzz, a perfect combination of almond butter, almond milk, bananas, cacao and protein powder.

Catch a Healthy Habit in Fairfield: New Summer Menu, Raw, Vegan, Gluten Free

Unassumingly tucked away amongst the store-fronts in downtown Fairfield is Catch a Healthy Habit. Maybe you’ve not been in a while…maybe you’ve never been at all, or you’ve been curious, but you’ve never been. The Cafe has been in Fairfield for over six years and in New Haven for two years prior to opening in Fairfield.

This casual, health-based, raw, gluten-free and vegan eatery focuses on clean eating. Their products are organic and non-GMO and the tastes and presentations are delicious and beautiful. They recently launched their new Spring/Summer menu and Stephanie Webster, armed with her camera, and I had the opportunity to stop in and sample some of the newest goodies to grace the menu. The food is gorgeously plated, visually stunning, allowing the naturally vibrant colors of spring to take center stage. As the weather heats up and we shed our outer layers we still need to satisfy our hunger without feeling weighted down.

Vegetarians and vegans and clean eaters rejoice, The Stand Juice Company has opened its 3rd location and is now open in Westport.

Carissa and Mike Hvizdo are passionate about what they do and passionate about the plant based juices, snacks, sandwiches and baked goods they serve at The Stand. Their commitment to “providing good food and a better earth using the land to do so,” has paved the way to their newest and 3rd location.

Mike and Carissa met at a farmer’s market. They will tell you that their connection was profound - brought together by her passion for living life off the land and Mike’s first-hand experience with conquering a rare blood disease through natural healing methods, which ultimately led to him earning his holistic educator certification and his work with the Hippocrates Health Institute in West Palm Beach, FL.

Fairfield gets Freshii! Nutritious Healthy Food For People On The Go

Jessica Ryan

Fairfield has worked its way up the food chain, offering all sorts of great dining opportunities for those with even the most discerning palates. With all the new restaurant openings, there was one thing that was lacking in the town’s culinary offerings; a really good health-food based option. Until now - enter Freshii.

Sandwiched in between The Fairfield University Bookstore and Chef’s Table is Freshii, recently opened by owner Jonathan Blob who also owns the Westport location. Although word had not yet really gotten out, the restaurant was bustling the two times I went in, first to check it out, then when I returned to chat with Blob.

The store, long and narrow, airy and bright, evokes a fresh, healthy attitude. Bright green, leaf-colored chairs are neatly lined up against the long counter space on one wall just below a large mirror reflecting the words...EAT. ENERGIZE. from the opposing wall. The light woods and grass-like covered wall lend themselves perfectly to an eatery of this type. A large menu board lists many and varied options. There are choices for breakfast, smoothies, juices, salads, wraps, bowls, soups and burritos.

Fresh Nation Enables Home Delivery for Westport Farmers' Market

Fresh Nation, the online marketplace for farmers markets, and Westport Farmers’ Market announced they have formed a strategic partnership to provide online shopping and home delivery.  Fresh Nation will operate an online storefront for the Market, providing local consumers with the ability to place an online order from many of their favorite Market vendors and receive same day home delivery from a Fresh Nation personal shopper.

Fresh Nation delivers fresh food direct from farmers markets to consumers, by bringing local farmers markets together into a convenient online shopping destination, enabling farmers and food makers at the markets to reach new customers who do not normally make it to the market.  The company employs trained food shoppers to go the markets and personally fill customers’ online orders.  After receiving orders from Fairfield County residents for Thursday delivery, Fresh Nation fills these orders at the Westport Farmers’ Market and drives them directly to customers’ homes.

“We are committed to bringing the freshest and best foods from the Westport Farmers’ Market to all members of our community,” said Lori Cochran

The Farmer's Cow 2014 Farm Tours: Meet Your Local Farmers!

Ingredients CT Farms Local Farm Farm Fresh

CTbites Team

The Farmer’s Cow announces its 2014 Farm Tour schedule and invites visitors to come out to the country and meet the farmer’s that bring you real local Connecticut milk and dairy products.

Locally sourced food is one of the hottest trends in the 2014 culinary forecast according to a recent survey by the National Restaurant Association. But what is local? The Farmer’s Cow milk comes from the contented cows of six real local Connecticut family-owned dairy farms, not from six other states.  “Real local” means our farm fresh products get to you faster and that means greater nutritional value and a smaller carbon footprint.

“If you can visit the farm, then you know it’s real local,” said Robin Chesmer, Managing Member of The Farmer’s Cow.

"We invite families to see first-hand what life is like on a working dairy farm and learn about how we are working to save Connecticut farmland and sustain farming as a way of life.”

The 2014 Farm Tour schedule includes events in every season – winter, spring, summer and fall. Each tour is unique and celebrates a different aspect of what it means to be “real local.” Visitors can meet the cows and calves, learn about dairy farming and sample The Farmer’s Cow milk, ice cream and beverages. Hosted by The Farmer’s Cow farm families, all events are free and fun for all ages.

In case of inclement weather, please check The Farmer’s Cow Event and Facebook pages for updates.

All events are free and no reservations are required.

You just did it all this holiday season. And by that, I mean...cookies became a food group. Mixing, stirring and shopping had you working your “muscles” (how to polish something, right?). Real exercise resided in the back seat, crammed in between boxes and bags and wrapping paper. Your sanity was also wedged in there, too, now that you think about it. Thank goodness that a new year is upon us because you weren’t quite sure you could take another week, chaotic and fun as it may have been. And yes, there was much good in the holiday season...but it’s all....tiring. So now, after the decadence and gluttony, let’s reset. Recharge. And for the love of Pete, put down that cookie.

Here we offer, as your first gift of the New Year, some great resources, including juice cleanses, yoga joints and healthy eats, to get your body and mind back on track and ready for action in 2014!

Chef Arik Bensimon of le Farm embraces the summer growing season with this simple recipe inspired by a recent trip to the local farmers' market. Thinly shaved vegetables with varying weights and texture are drizzled with a light take on a classic Caesar dressing. (You'll want to save this recipe for use year round.) Chef Bensimon has left off the quantities on the main ingredients as there are no wrong answers here, and he recommends any raw vegetable that is to your liking as the summer harvest rotates through. Enjoy this wonderful Summer Market Salad Recipe from le Farm.
