HAPA Food Truck - Tacos with a Philippine Twist Jeff "jfood" Schlesinger May 21, 2015 There’s a new food truck in Stamford and it is well worth the visit. HAPA Food Truck rolled onto Bell Street this week serving three types of tacos, Korean short rib, Philippine chicken adobo and Nonny’s sweet peppers, burgers, both beef and Ahi, plus bowls of poke and chicken adobo. CTbites stopped by to sample a few tacos and meet the owner. I ordered two of the tacos, the short rib and the chicken. Each was wrapped in a corn tortilla that was quickly heated on the flattop. The short rib was topped with a red bean paste, sriracha and a homemade Asian slaw. The meat was tender and juicy with just a touch of sweetness. And the other ingredients added additional flavors and textures. A little more heat from additional sriracha would have been fantastic. The shredded chicken was served with diced tomatoes and onions, and thinly sliced radishes. The chicken was full of great flavors, just a touch of tangy-sweet from the adobo and the combination was excellent. They were served with rice that is topped with seaweed and sesame seeds.Chris Gonzalez, the owner, was born in the Philippines and he is preparing dishes based on his mother's recipes. After spending time working in restaurants in Hawaii, he recently ventured east and decided to cook and serve his favorite recipes from his food truck. He is no stranger to the culinary world in Fairfield County...he also works at Washington Prime in SoNo. After only three days on Bell Street, Chris and his HAPA Food Truck are serving pretty good tacos with a Philippine twist.
