Along with tips on adding fruit, olives and cracker accompaniments, this demo features Connecticut cheese and tastings. Cooking with The Big Cheese Demo (12:00pm – 12:35pm) The Cooking Channel’s The Big Cheese is hosted by Jason Sobocinski, founder of Caseus Fromagerie & Bistro. In this demo, Sobocinski makes quick work of a cheese-based appetizer and main course. Participants leave with printed recipe cards, the lingering taste of The Big Cheese’s straightforward creations and inspiration to repeat the exercise at home. 30 Minute Mozzarella Demo (1:00pm – 1:35pm) Mastering fresh mozzarella making is a cinch with the New England Cheesemaking Supply Company, Inc. They have been provisioning cheesemakers around the world for more than 30 years with kits, equipment, ingredients and in-depth information. Poetry, Music & Cheese Class (11:00am – 11:35am) Devotees explore the virtues of cheese, a “living entity” according to Robert Aguilera of Fromagex, through wine and more creative pairings: jazz, classical, rock and new age music, as well as classic and modern poetry readings. “This way,” Aguilera explained, “people’s understanding of cheese becomes more tangible, and their appreciation for cheese grows in new ways they never would have imagined.” Class is $20 and seats are limited.
