Julienne of Kale with Goat Cheese and Roasted Beets finished in a Blood Orange Vinaigrette

Linguini with Arugula, Grape Tomatoes, Garlic, Scallions, Julienne of Zucchini, Olive Oil, and Zest of Lemon

Eggplant Rollatini filled with Leeks, Scallions, Onions, Garlic, Eggplant, Parsley, Capers, Parmesan Cheese,
and panko breadcrumbs with a light tomato sauce
