Coconut Fudge Recipe via Marcia Selden Catering

Coconut fans get ready to find a new favorite treat. Made from shredded and desiccated coconut, this is deeply flavorful and almost "healthy." Warning: This fudge is so deliciously decadent that you may not be able to stop eating it. 

Coconut Fudge Recipe 

Ingredients:

  • 2.5 C Shredded Unsweetened Coconut
  • 1 C Desiccated Coconut
  • ½ C Sugar
  • 1 can Condensed Milk
  • 2 T Ground Cardamom 
  • 1 C Unsalted Butter
  • 1 C Roasted Unsalted Pistachios, finely chopped 

Directions:

Heat a pot over medium to low heat. Add shredded coconut, desiccated coconut, sugar, and condensed milk. Cook, stirring frequently for 20-25 minutes until the mixture has thickened. Should NOT brown! Stir in the ground cardamom and butter and remove from heat. Pour the coconut mixture into a baking dish covered with parchment paper and spread out about ½ inch thick. Top with pistachios. Press in lightly. Chill and then cut out into ½ inch pieces.
