The Spread Opening Greenwich Location This Month: Sneak Peek

The Spread is getting ready to open the doors to a second location in downtown Greenwich at 18 West Putnam Avenue. The new Greenwich spot will feature Chef Carlos Baez' inventive American menu with strong global influences. The menu will look and feel much like that of The Spread in South Norwalk but Chef Baez has a few surprises for his Greenwich guests.  

The Spread Greenwich has taken over what was once Barcelona, this having particular significance for The Spread team as co-owners Shawn Longyear and Andrey Cortes tended bar there years ago. The look and feel of the new digs combines rustic reclaimed woods (c/o Board Silly in Ridgefield) and industrial perforated metals creating that "just right for Saturday night vibe" we've come to know and love in Norwalk. The space features a beautiful open kitchen, a chefs table, private dining, and...wait for it...a 70 foot bar wrapping around the entire main dining room. 

Chef Baez says the menu will include all of The Spread favorites including: Veal & Ricotta Meatballs, Brick Chicken, Beef Tongue, the Cheeseburger, and the Foie Gras Torchon.  There will be an extensive Meat & Cheese section on the new menu alongside creative preparations for an array of seafood selections, lamb, pork, duck and scallops. He will also be adding more steaks, and a caviar program. On the veggie front, Chef Carlos has developed a relationship with Horseshoe Farms in Ridgefield, and the farm will be growing ingredients specifically requested and utilized at both Spread locations. The Spread’s philosophy of offering high quality, locally sourced ingredients will carry throughout. 

Let's get back to that 70 foot bar, likely the largest bar in Fairfield County. Spread owners, Chris Hickey, Christopher Rasile, Andrey Cortes, and Shawn Longyear have accomplished careers behind the bar and this may be the ultimate stage for their craft. 8 tap lines have been installed. Beer will be flowing from six of these, while two have been reserved for craft cocktails that will be batched for quick service.
