Caseus Fromagerie & Bistro Closes Its Doors: New Biz On The Way!

Caseus Fromagerie & Bistro will have its last service on Saturday July 21st 2018. After 10+ years of an amazing run, I’ve made the decision to close Caseus to pursue other projects and most importantly devote more time to raising my three young children and of course seeing my wife every now and then. Over the last decade, Caseus has served New Haven with passion, love, and true thoughtfulness. For me, personally, I am ready to see something new take its place and thrive. The foundation of what Caseus has been and always will be the community, our community, that we serve, the people who work to make us so exceptional and the deep respect for the ingredients we use. A new business, which will be unveiled in the next few weeks, will be a collaboration between two long-time Caseus employees, Chefs Alex and Craig and myself, and will maintain those same foundations with a commitment to be the best possible business for our exceptional city.

Our dedication to philanthropy, sustainability, and food made with love will continue to be our core values. All of the employees currently working at Caseus will be just as much a part of this new business as well as help us build and succeed in this new and exciting challenge! I would like very much to thank the staff of Caseus, past and present, for making us so truly wonderful over the years.

My emotions of sadness in closing this chapter of my business's life are coupled with feelings of invigoration for the new project. More catering, more services (including weekend brunch!) and more accessible and healthier food (still exceptionally delicious) are just a few of the planned changes. The space will undergo major renovations with an anticipated reopening date set for early September. I hope that everyone joins us for this exciting new launch of what will be a new fixture on our little corner in New Haven.

From the bottom of my heart and the Sobocinski family I would like to thank you all for the amazing support and belief in what I wanted to achieve with a tiny Bistro & Cheese Shop. Your love for the food, staff, and mission of Caseus over the past 10 years has been truly amazing and monumental. It has been my honor to be part of hosting, feeding, and entertaining so many exceptional people. I look forward to seeing all of you very soon and continuing the mission with a new business and my new partners in September!
