Every Thanksgiving, we ask our friends in the Chef community for their favorite holiday recipes. This year we got a last minute entry from Chef Matt Storch of Match Restaurant & The Chelsea with a great idea for all those leftovers. Ok...that picture above...it's not turkey...those are chicken livers, but it's the best we could do on short notice. Here is Matt Storch's Day After Turkey & Waffles Recipe.
The Chelsea in Fairfield boasts a vibrant pub scene and some pretty tasty fare. Chef Matt Storch who oversees the kitchen with Jeff Spence (also from Match Restaurant) says, "There's a lot of love in every dish." Given the season, we were feeling the love for this classic mashup: Gazpacho meets Classic Mozzarella & Tomatoes. Enjoy this dish while tomatoes are still in season, because unless you are canning those beauties, the harvest time for local vipe ripened tomatoes is coming to a close in September.

I know everyone has their favorite mashed potato method. Some like it lumpy, some like it smooth, some like it baked in the oven so the top gets nice and crispy. This is a method of making super rich and creamy mashed potatoes using a ricer or food mill (cheap device you can find in any food store). I like the food mill better.
Note: Potatoes have a ton of starch, so if you do not want ‘gummy’ mashed potatoes, do not over cook them, and do not use a mixer or any other electric device to mix the potatoes. The idea is not to over work the potatoes.
