Jennifer Spaide of Simplicious is constantly coming up with elaborate menus for her holiday celebrations that put my cooking to shame. When she tweeted about this one, I simply had to have the recipe. Grilled Lamb Chops are one of my favorite dishes, and when paired with this healthy and light Mint Pesto, they become the perfect Easter entree. Enjoy this beautiful dish. Happy holidays!

I like to periodically check out the local blogs to see what culinary feats the Fairfield County home cooks are coming up with. One of my favorite places to browse for healthy recipes with seasonal ingredients is Jennifer Spaide's GreenChicLife.com. As a nutritionist, Jennifer uses her vast knowledge to create recipes that are both flavorful and packed with nutrient dense ingredients.
Here's what Jennifer has to say about why you should make this dish in your home (other than it just looks great): Shrimp are a healthy addition to any diet. Aside from being an excellent source of low-calorie, low-fat protein, shrimp boast a high concentration of many important nutrients including selenium, vitamin B12, and omega-3 fatty acids. Selenium is a powerful antioxidant that helps protect against cancer and other degenerative diseases. Vitamin B12 is a key factor in cardiovascular health. And the omega faty acids are anti-inflammatory as well as heart protective.

As a chef it’s important to know your weaknesses in the kitchen. And I am fully willing to admit that mine is baking. If it’s more complicated than emptying a mix into a bowl, cracking a few eggs, and whisking, don’t expect me to do it well. So you can imagine the panic that pulsed through me when I was asked to bake cookies for some gift baskets.
What, me? Really?! But I was up for the challenge… or the cheat. Don’t tell, but I decided to pull a Sandra Lee and take some “semi-homemade” help from the grocery store by purchasing premade sugar cookie dough. I chose an all-natural brand because it’s a little healthier (no trans fats or high fructose corn syrup).
With the basic batter under control, and a little stress off my shoulders, I was free to get creative with the flavors & fillings. I decided to make three different kinds of cookie: Chocolate Cherry Almond, Ginger Sesame Coconut, and Orange Fig Thumb Drops. These recipes are so simple it's genius (not to toot my own horn, but “Toot toot”).
Parrilada del Mar - Grilled lobster, scallops, shrimp, mussels, fish, baby squid; sate fennel, lime juice and extra virgin olive oil Photograph by Judith PszenicaI am a sucker for drinks with a kick so when I heard that Meigas, an authentic Spanish restaurant in East Norwalk, was serving up jalapeno martinis alongside their tapas, it jumped to the top of my “Gotta Get To” list. For those unfamiliar with Meigas, it is has been around since the 80's (also under the name Meson Galacia). Some may recall (either with fondness or not) the elaborate Nuevo foam and emulsions that graced their plates in recent years. However, the menu shifted in late 2008, when Carlos Hernandez took over the helm bringing with him a return to more traditional Spanish tapas with a modern flair.
Eager to get my hands on this jalepeno martini and to get to the bottom of Meigas' uneven reviews, my friend and I headed over for lunch last Saturday.

This recipe was developed for one of my readers who was looking for a healthy salsa to serve at a party..."something a little green." I was so pleased she had made the request because this Green Goddess Salsa has become one of my staples. It is packed with healthy ingredients and is amazingly nutritious. It also has a clean, fresh flavor that is perfect with homemade tortilla chips, with eggs in the morning, or served with grilled meats.
