One of my favorite places to browse for healthy recipes with seasonal ingredients is Jennifer Spaide's GreenChicLife.com. As a nutritionist, Jennifer uses her vast knowledge to create recipes that are both flavorful and packed with nutrient dense ingredients.

Aside from being an excellent source of low-calorie, low-fat protein, shrimp boast a high concentration of many important nutrients including selenium, vitamin B12, and omega-3 fatty acids.  Selenium is a powerful antioxidant that helps protect against cancer and other degenerative diseases.  Vitamin B12 is a key factor in cardiovascular health.  And the omega faty acids are anti-inflammatory as well as heart protective.

If you discover sweet potatoes and spinach in your fudge brownies at Green Gourmet to Go don't be surprised. OK, you can keep that a secret from your kids because the veggies are not detectable in these moist, chocolatey bites or in the Blondies with a sweet potato base.  The chocolate (anti oxidants a plenty!) masks the veggies and you will be better off for having added a few more to your daily intake.  My fave desserts were the peanut butter chocolate chip cookies and the almond oaties.  They tasted most like what I would expect (read: crave) from a cookie. Imagine eating your veggies in your dessert!  I didn't mean to jump to the end first but I was so enthralled by the ingredients list that I did exactly that!

Linda Soper-Kolton has been open in Black Rock for only 5 weeks but she is well on her way to establishing herself as a resource for healthy meals and nutrient dense foods.

Community Supported Agriculture (CSA) is a means for consumers to buy a share in a farm's seasonal production directly from the farmer. Consumers benefit from buying local, farm fresh, high quality produce at an attractive price and farmers benefit from pre-selling the harvest. It’s a clear win-win. CSA members typically pick up their weekly shares at the farm or a location in their community, but a new CSA option is delivered to your door! Community pick up locations generally involve a small volunteer commitment, perhaps two hours per season, during which the site is readied and broken down for weekly share distribution. CSA membership is not for everyone because in such a partnership arrangement, the consumer shares both the bounty of the farm's harvest and some of the risks inherent in farming.

We have lost so much farmland in Connecticut that less than one percent of our residents earn a living by farming. Eat well, support your local farmer and do your bit to preserve farmland by buying a CSA share in one of our precious organic or IPM (Integrated Pest Management) farms.

Back in January I announced that it was CSA registration month and shared that two organic farms were expanding and had opened their lists to new CSA families: Sport Hill Farm in Easton and The Hickories in Ridgefield. The CSAs from these two farms quickly sold out. The good news is that there are still a few CSAs open for new subscribers, but you should act quickly if you want to secure a share.

For some time now I have been making special trips to a Doc's, a Westport coffee house, just to purchase their hand made BlueBelle Granola Bars. I would look for any excuse to drive down their street in the hopes of finding my favorite flavor. Always on the hunt for talented small local producers, I recently tracked down the owner of BlueBelle Premium Granola Bars, Westport's Jerri Graham, to learn more about her take on this popular snack. 

Jerri's mission is to create healthy bars that are delicious, satisfying and enhance over all well being. She takes simple, nutritionally dense ingredients and combines them such that each one is identifiable and discernible. She is a creative soul with great business integrity, who understands the importance of a product to both enhance one's health and thrill the palate. 

There are currently 4 variations on the bar, all using the same base of organic oats and oat flour.  The choices are Lemon Ginger, Fruit and Nut, Cherry Cranberry Almond and Chocolate Coconut,


Roasted Beet & Watercress Salad w/ Toasted Walnuts

People are often daunted by the prospect of proper beet handling and cooking. Personally speaking, I always order them when dining out because I lack the will to cook them at home. Recently, I sat in on one of Chef Nicole's cooking classes, where Balsamic Glazed Roasted Beets with Toasted Walnuts & Grapefruit Over Watercress was on the menu. Watching the simple preparation of this delicious dish helped me turn the corner.

Beets can be found year round at your local grocer although the small tender beets are generally in season only from June through October. High in nutrients and low in calories, these sweet earthy root vegetables are great solo or in salads like the one below. The acidity of the balsamic vinegar and the grapefruit work well to counterbalance the sugary beets, while the toasted walnuts provide great texture and crunch. Make this dish for your next dinner party or as a light healthy lunch.

Entering Health in Hurry in Fairfield is like entering a close friend's kitchen after she has prepared fragrant dishes for you all day. Owner, Sue Cadwell, greets customers while literally standing in the kitchen of her 275 Sq. foot storefront tucked away off the Post Road.  There is nothing but a short counter to separate you from the simmering pots and a couple of dedicated cooks chopping and packing healthful, mightily flavored dishes to go. Sue's philosophy is simple. She provides a welcome alternative to fast-food for busy people using organic, whole foods, seasonal produce and ethnic flavors from around the world. 

What she does in this tiny kitchen is remarkable, and even while working she is always ready to  pause and greet her customers with a welcoming smile and a hug.  She will ask if it is your first time there and gladly explain as much or as little as you would like to hear about each dish and its ingredients.  Food allergies? Food sensitivities? No problem. Sue caters to all dietary needs and to her loyal following. This may be a small, intimate operation, but Heath in a Hurry has a big heart and big intentions.

Here in Fairfield County, there are a number of interesting vegetarian cafes, restaurants and markets that focus on mostly organic, mostly vegetarian ingredients and healthy eating. The most recent addition is Catch a Healthy Habit Cafe, just past the Community movie theatre in Fairfield.  In the ever burgeoning foodie scene that is sprouting in Fairfield, this one is unique and specific in its orientation and intention.  Be assured that everyone who ventures (and I mean adventures) into this cool spot is in for an unusual experience.

CATCH A HEALTHY HABIT is a raw, vegan cafe.  HUH?  No need to be stumped.

Radishes and chard were the last things growing in the garden. A creature had gnawed on one of the radishes, so it was time to pull them up. But I wasn’t just harvesting the root. I was eying their bright healthy-looking greens.

Yes, you can eat radish greens. They contain more vitamin C, calcium, potassium and folate than the root, and while peppery, they’re mellower than the root. They say you can eat them raw, but I’m turned off by the fury-prickly texture. I make soup with them.

Radish leaf soup is an old French recipe. You can find it in Larousse Gastronomique, but it’s easy enough to wing it. This is a quick soup. You’ll be eating in this mildly piquant green elixir in 30 minutes.

Home Made Indian Fare in a Flash

As I walked into my house the other day, distracted with thoughts of what to make for dinner for our houseguests, I was greeted by a sweet scent of ginger and curry wafting through the door. I was famished after a long day and was downright tickled to find a delicious terrine of spinach, chickpeas, and Indian spices stewing on my stovetop. I sighed, thinking how pleasant it was to have houseguests after all!

My dear friend Jackie and her Indian husband, Habib, were staying a few nights on their way up to Maine. As I lifted the lid and took in the tantalizing aroma, I was transported back to Jackie and Habib’s wedding in a Tribeca loft, where Habib’s mother had seemingly spent weeks preparing the most sumptuous Indian fare for their wedding reception. I had heard from Jackie that Habib had inherited his mother’s cooking skills as well as their old family kitchen secrets, but I had never experienced it firsthand. Turns out, anyone can enjoy this home made Indian fare without spending hours in the kitchen.


A Better Bread: Wave Hill Breads in Wilton

My first experience with Wave Hill Breads was at The Dressing Room in Westport. Ordinarily, when the "bread course" arrives, I sample but only pick as I like to save my appetite for the main event. That evening, however, when the waiter strolled to the table, the smell of freshly baked bread immediately altered the dining plan. It was warm to the touch, had a strong crunchy crust, and the kind of dense spongy inside that has great mouthfeel. It required no spread. It was perfect all by itself... although the sweet creamy butter slathered on sure didn't hurt. When asked where this resplendent loaf had whence come, they answered Wave Hill Breads.

Googling Wave Hill Breads from the restaurant, I found to my great excitement, that these lovely loaves were made locally in Wilton, in a small bakery right off Route 7. I was there the following day. I had to find out more.

Photo: Stephanie WebsterFairfield County women have a little secret… and it isn’t sweet. Don’t tell, but hordes of us find time in our day to sneak into Robeks to experience our daily rapture. Simply, it’s Tart - paradise in a Styrofoam bowl. Plain, unadulterated ecstasy, this frozen treat at only 112 calories for a small (157 for a medium) is hardly sinful. It is delicious on its own but can be smothered in coconut, dappled with raspberry, sprinkled with chocolate chips, textured with granola, the choices are endless. But the slightly sour, wonderfully light, frozen indulgence is best on its wicked own.
