Cake Box, a bakery offering cakes, cookies, cupcakes and coffee as well as nut-free and gluten-free baked goods, will open Feb. 2 in the lower level of 10 Bay St., behind the former Post 154 Restaurant, according to Robert Byrnes, a Ridgefield resident, who co-owns the business with his wife, Jordan Gregory.

The couple also own two bakeries in Ridgefield, Cake Box at 1 Big Shop Lane since April 2010, and Swoon, a nut-free, gluten-free bakery at 109 Danbury Road.

Become a Loafer: Scratch Baking's 2016 Loaf of the Week Club

The early part of the year can be a bit of a food doldrums following the festive whirlwind of the holidays, but I'm here to tell you it doesn't have to be. Beginning on January 15/16 for eight weeks, Scratch Baking in Milford can bake you a loaf of bread paired with a spread through their Loaf of the Week Club. Think of it as a New Year's Resolution you may actually keep.

Equal parts surprise and deliciousness, Scratch Baking's Loaf of the Week Club offers "Loafers" (Loaf of the Week members), a freshly baked loaf of bread that is creatively paired with a spread. The loaf reveal is made at the beginning of each weekend, often in an email with a recipe from Scratch. Several of the loaves I experienced last year were revalatory (I'm looking at you, Ethiopian Rosemary Honey Bread and you, Jalapeño Cheddar Country Loaf), and all were comforting and delicious.

Donut Crazy to Open in New Canaan via The New Canaanite

As announced in The New Canaanite, New Canaan’s local news website, Donut Crazy has announced its third location and will open in New Canaan, hopefully by the end of the year.

With two location up the Merritt in Stratford and Shelton, the donut shop that features creatively conceived donut combinations named “Cherry Bomb,” “Cannoli,” “Maple Bacon,” the holiday "Noggin Donut" (Eggnog custard filled, rum flavored frosting, sugar, whipped cream topping, with a pinch of nutmeg) and the “Fat Elvis” (Bavarian cream center topped with peanut butter bacon banana chocolate honey), Donut Crazy will occupy the space that formerly housed the Sweet Shoppe and Merle Norman Cosmetics at 4 South Avenue.  

A gourmet doughnut shop with two locations in upper Fairfield County is preparing to serve its savory treats at the former Sweet Shoppe space on South Avenue, mostly recently Merle Norman Cosmetics.

Wave Hill Breads turns 10 this year. We sat down with Mitch Rapoport and Margaret Sapir to talk about 10 years in the bread biz. 

What made you decide to launch Wave Hill Breads? Having observed that there was so little outstanding bread between New York and Boston, we recognized an unmet need. After we tasted remarkable bread at a restaurant in Stowe, Vermont, we tracked down the French baker, apprenticed to him, and brought authentic French bread-making techniques Connecticut.

Has the business of baking changed in the past 10 year? How? Our business has changed since we moved to Norwalk from Wilton.   We expanded our product line and now offer a wider variety of breads, croissants, and pastries.  We opened a Café which won Best Bistro on the Gold Coast from Moffly Media but it distracted from our core wholesale business.  We also participated in the short-lived Sono Marketplace. With so many restaurant and store clients, we automated our delivery and production tracking.   But we still shape every loaf, croissant, and cookie by hand.

This summer marks the 10 year anniversary for Sono Baking Company. To celebrate the milestone of this beloved local bakery, we sat down with owner, John Barricelli, to talk about the business of baking and his plans for the future.  

What made you decide to launch Sono Baking Company? 

We launched Sono 10 years ago because we found that the need for baked goods and breads were hard to find in this area....everything was being brought up from the city....I always wanted to bake bread in a big oven early in the morning with no days off!

Has the business of baking changed in the past 10 year? How?

The business has not changed, but competition has grown a little....we still think we are superior to anything out there...we bake fresh everyday....bake locally, distribute locally.

Ross' Bread in Ridgefield Changes Ownership

Photo: Ross' BreadRoss' Bread in Ridgefield, the popular bakery and café announced on March 31 that the business was changing hands from one Ridgefield family, Ross and Val Schneiderman, to another, Amy Freidenrich after six years in business.

The bakery follows the tradition of neighborhood European bakeries, with daily homemade breads (the Sweet Earth is a personal favorite), to cakes, pastries and soups using predominantly organic flour and ingredients. The location, tucked in the busy Marketplace at Copps Hill, has supported its mission and established the café as a popular meeting spot.

Sono Baking Company Opens in Downtown Westport Tomorrow!

Tomorrow, March 17th, SoNo Baking Company will open the doors to its newest location in downtown Westport at 44 Church Lane. Owner John Barricelli will breath new life into the spot that once housed Java Coffee with a full breakfast and lunch menu for local Westport guests and lovers of SoNo's baked good, breads and coffee. 

What should diners and shoppers expect? The downtown location will mirror SoNo Baking Company's SONO menu and concept and will feature eggs and breakfast specialties including Belgian waffles and pancakes followed by soups, salads and sandwiches for lunch. 

A 12 person communal table anchors the dining space, which seats 50, and the patio will open with an additional 20 seats as soon as weather permits. 


DiMare Pastry to Open Second Location in Downtown Stamford

Here’s some great news for residents of downtown Stamford…

DiMare Pastry Shop has announced that it will open its third location at 30 Spring Street in Stamford, serving its delicious cakes, pies, cupcakes, pastries, rolls, breads and its ever-popular and outrageous cannoli dip. The location will be named DiMare Pastry Downtown and is convenient to the explosion of apartments in downtown Stamford along Washington, Atlantic and Bedford.

The newest location on Spring Street will be familiar for patrons of Bar Rosso and Volta as DiMare becomes the third occupant in this storefront. The interior design is currently in the planning and development phase and the artist rendering on their Facebook page (above) indicates a sleek design to showcase their outstanding baked goods. Sweet Pea’s Baking Company is not just another small town bakery – it’s much more. Owners Rafael and Katjia Pita met as young students in Paris. There, on their first date, they shared their mutual dream of one day opening a bakery. Friday June 6 is National Donut Day! Yes, it's an actual holiday... it started in 1938 and has been celebrated on the first Friday in June ever since.  Back then, making doughnuts proved a complicated ordeal, with people resorting to wine bottles as rolling pins and metal tins as cutting edges.  Today, however, several CT restaurants have made doughnuts an art form.

As a Stamford resident, I constantly heard people talk about the legendary donuts at the Lakeside Diner.  Their rounds are neither ornate nor revolutionary.  Instead, the old-fashioned donuts taste just like something Grandma would have pulled out of the oven.  The classic cake recipe has a dusting of granulated sugar that pleases children and adults alike.

On the other side of the spectrum, Orangeside of New Haven eschews tradition and bakes up SQUARE donuts.  It started out as an exercise in frugality; traditional round cutters proved expensive and the square shaped reduced the amount of scrap dough.  However, the original design became an instant hit, even recognized by Saveur Magazine as one of the top 50 donuts in the United States.

“gingerbitz” is opening its doors in what owners Andrew and Karen Zuckert call the store’s “dress rehearsal” and CTbites and Hearst Connecticut Media Group were invited for a sneak peek and sample several of Karen’s delicious creations.

Described as a bakery and café, gingerbitz is a welcome addition to New Canaan, which has yearned for a local bakery for many years. The longtime dream of New Canaan residents Andrew and Karen Zuckert, gingerbitz represents years of dedication. Karen is well known within Fairfield County for her amazing gingerbread houses that have graced many mantles, as well as featured at numerous holiday festivals. When the opportunity arose to open a bakery in town that would “broader showcase Karen’s talents,” the couple jumped at the opportunity. They painstakingly and meticulously renovated the location, developed relationships with vendors to provide organic products and Andrew embarked on his search for the perfect coffee.


Valbella: Old School Italian Elegance in Greenwich

I never go to Italian restaurants in Connecticut because I was lucky and spoiled enough to have eaten in Italy - a lot - and I always feel disappointed in the American version of Italian cuisine. So when a friend begged me to review VALBELLA in Greenwich, I was reluctant to say the least. The pastry chef, she claimed, was world renowned and his food art simply had to be reviewed. I did some research and decided to acquiesce. For more than 20 years, the stately, Victorian Valbella has been the archetype for excellent but old school Italian cuisine in the Greenwich/Riverside area, and has successful sister locations in Manhattan’s Meatpacking District and Midtown. And I can understand why. It is in no way funky or hip or cool but is extremely elegant and the food, though I am hesitant to admit it, was outstanding.
