It’s a Woman’s World: Stephanie Geiling of Relic Brewing

One of the promises I made to myself when I started dabbling in this particular column was that I’d do the opposite of only covering female chefs. I wanted to dive deeper into the hospitality industry to highlight those doing meal prep, perhaps a barista at a popular coffee shop, bakers, and in this case, a woman who works in brewing.

When I began my introductory search via Instagram stories, Stephanie Geiling came up as a suggestion more than a few times. Steph, as it turns out, is the operations manager at Relic Brewing Co. in Plainville.

The former psychological researcher at UCONN sort of stumbled into the beer world after she chose to leave the research field. She ended up at Relic after stopping into the tasting room one day and Mark Sigman, Relic’s owner, offered her a job.

“It was my first time ever going to a brewery and I said to myself, I have no idea what I’m doing, this is going to be a joke, but I’m going to do it anyway,” she says. “I helped in the tasting room, and I was still working in research and at a liquor store. I left research for personal reasons, and I started to enjoy the liquor industry. I also felt like this was a more supportive and inclusive environment.”

In addition to her career at Relic, Steph plays guitar and belts it out in a doom metal band based in Plainville called Lightkeeper, and she just started training in martial arts.

There’s more in the Q&A about what she does as Relic’s operations manager and we got into the widely publicized topic of sexual harassment, sexual assault, sexism, and the like as it pertains to breweries.

For context, brewer Brienne Allan (@ratmagnet on IG) helped expose the black eye by sharing thousands of anonymous responses she received on Instagram’s “Questions” feature.

What do you do at Relic Brewing?

When I first started, I worked the tasting room. Then I started helping Mark dry hop beer and clean kegs, and I still do that. It’s super fun here and I like the creative aspect. When I made the pineapple gose, that was fun to put together. I came up with the recipe for that one, usually we come up with them together but this particular one is all mine because he doesn’t like those type of beers A lot of times, I drive the truck or load the truck, unload pallets of beer, I run the tasting room, on Saturdays I run the kitchen, cooking, I order from distributors, contact customers. I’m a Jack of all trades.


314 Beer Garden Opens at Former SoNo Marketplace

Some of you may remember the multi-vendor and artist space known as SoNo Marketplace at 314 Wilson Avenue. Don’t worry if you think it passed you by, it was sadly only open for a blink. But if you do recall, the courtyard area of the “market” was always set up for events and an outdoor bar with draft lines. Some years ago, SoNo Marketplace did host a chili cookoff and a pig roast with Half Full Brewery.

In 2021, that patio space has been resurrected as 314 Beer Garden, complete with 13 taps and all the essential biergarten décor with Adirondack chairs, picnic tables, string lights, and a massive fire pit smack dab in the center of it all.

314’s intro beer list on draft and in cans included a strong Connecticut brewery presence. New England Brewing Co.’s signature, hoppy Sea Hag and Supernaut were both available, as was Evenflow, a crushable lager from Hamden’s own No Worries.

It’s been a couple of years since I dined at Bistro V on the Ave in Greenwich, and I was thrilled to have been invited for lunch last week.

When Marc and Evelyne Penvenne noticed a for sale sign on the restaurant’s doors they knew that they had to step in and purchase it. The former Versailles was not only a fixture in the Greenwich restaurant scene, but for this couple it had a nostalgic and sentimental meaning. They just couldn’t let the beloved establishment go; the two met there as employees in. The Penvennes had already established themselves as successful restaurateurs. The owners of another perennial favorite, Méli-Mélo, have been feeding guests there, just a couple of blocks away, for over 25 years.

After a slight rebranding, facelift and name shift, Versailles became Bistro V, inspired by their memories of growing up with the classic bistros in France.


Avellino Family BBQ Launches Food Truck at Third Place by Half Full Brewery

Leland and Sarah Avellino now have their BBQ spin-off.

If you recall, I covered their preorder smoked meat pickup concept earlier in 2021 and asked a question about whether Avellino Family BBQ would grow into a storefront. The answer was sort of a “not yet.”

Forget the brick-and-mortar. Think food truck. And it has a residence at the brand-new and stunningly beautiful Third Place by Half Full Brewery in the South End of Stamford.

Unlike Avellino’s BBQ pickup that includes pounds of smoked brisket, racks of ribs, and half chickens, the truck’s focus is sandwiches, some of them with smoked meat, some of them “smashed,” and others are occasionally grilled and sauced.

Let’s start with one of their signature smoked sammies. It’s a wagyu tri tip—served cold and shaved to the thickness of deli sandwich meat—with crispy shallots, a tangy dollop of BBQ sauce, and horseradish aioli.

Their other truck staple, you ask? A prime brisket blend double smash burger, melted American cheese, and Zap sauce (think Big Mac sauce with some heat) on a Martin’s Potato Roll.

Coffee for Good is now open in downtown Greenwich, and it’s not your ordinary high-end coffee shop. Sure, you can grab yourself a perfectly pulled shot of espresso or a latte c/o their well trained baristas and the fine roasters at PATH Coffee in PortChester. But Coffee For Good provides much more than a daily caffeine fix for our community.

Coffee For Good was spearheaded by Greenwich resident, Deb Rogan, in partnership with Abilis, as a self-sustaining, nonprofit organization, to serve as a training platform and employer for people with intellectual and developmental disabilities. The coffee shop, which provides espresso based beverages, smoothies, local baked goods, as well as sandwiches and salads, gives their trainees the opportunity to succeed and be a part of the local workforce.

There’s a rejuvenated buzz in Byram’s business district at the old digs once housed Mill Street Bar & Table and before it, Lolita Cucina.

The sounds of chatter and laughter, forks clanking and squealing against bowls, and hungry patrons slurping peppery, parm covered cacio e pepe are all coming from Rosina’s, a new Italian restaurant brought to you by a couple of young industry veterans you should recognize.

Rosina’s is the creation of Jared Falco and Coby Blount, who met at Fortina’s Armonk location in 2014. Falco helped run the show in the kitchen, while Blount managed front-of-house operations. “We’ve been trying to do something together for five years,” Falco says. “When we met, we clicked and always had mutual respect for each other. Even if we had it out, we could still be cool.”

The pair had a dream to work together, they just needed it to come together. Separately, they kept honing their crafts in the restaurant industry. After his first stint at Fortina, Falco took up executive chef duties at Washington Prime, Amore, Speedy Romeo, and he’d return to Fortina to express his creativity as a co-culinary director. And there’s a chance you’ve come across Blount at SE Uncorked or East End to name a few.

Their friendship kept them in touch, and they’d occasionally entertain meetings with possible investors.

“They didn’t have what we wanted,” Falco says. They wanted Sophia Loren on the walls eating spaghetti and that’s not us.” Blount chimes in, “Some of them wanted to use other people’s ideas or rip them off completely,” he says. “It didn’t feel like what we wanted to do. Or they wanted to do something corny that we weren’t into.”

What they wanted to do was classic but refined Italian food. And although it took a few years to come up with the concept, it’s the food Falco has been cooking for over a decade. Think along the lines of riffs on traditional pasta dishes, big salads, thin and crispy pizzas, and seasonal vegetable small plates. They also knew they wanted to be a neighborhood spot with affordable prices but with a handful of indulgent offerings if the mood should strike you.

Quietly, three months ago, Captain William Michael Harden aka “Captain Mike” opened his second Lobster Craft location in the heart of Greenwich on Greenwich Avenue.

We sat down to chat with him about the Greenwich location, new menu items, new restaurants down the pipeline and the challenges of opening a restaurant during a pandemic.

Like most restaurants, staffing has been an issue and he’s operating with a skeleton crew but he’s very proud of his young workers, their work ethic and dedication. With over a decade of success with the original Fairfield location as well as the Lobster Truck, the recipes have been perfected and feeding the masses is the easy part. (The hard part, for us, was deciding which roll to get! Scroll down and you’ll see what I mean!)

Hinoki, a relaxed tapas-style Asian cuisine in a casual, fine dining atmosphere opens in Greenwich.

Some things are worth waiting for, and Hinoki was one of them. Slated to launch prior to the pandemic, the restaurant’s doors are finally open. Brought to you from the successful team behind Miku Sushi in Greenwich and Kumo Sushi Lounge in Scarsdale, K. Dong and Chef Steven Chen, Hinoki introduces a new concept in Asian cuisine, bringing together a relaxed tapas-style Asian cuisine known as Izakaya along with the exclusive chef’s table experience known as Omakase, in a stunning setting at 363 Greenwich Avenue in Greenwich. The two concepts are separated into three separate sleek and elegant dining areas including a private omakase event space, as well as an outdoor space on Fawcett Place.

Last August, I brought you an article that highlighted Grigg Street Pizza’s origin story with background on owners Matthew Watson and Jon Corbo, and gave you details about the star of Grigg’s show, their picturesque, delicious sourdough pizza.

Towards the end of that article, I teased that sandwiches would soon make an appearance. I immediately knew I’d return to scribble out a sandwich sequel.

And here we are. Grigg Street’s sandwiches have arrived. And they’re spectacular.

But like every good sammie, it’s important to begin with the bread. It’s likely the only thing Grigg Street doesn’t make in-house. Instead, it’s made to their specifications by The Kneaded Bread in Port Chester.

“Jeff Kohn (owner of The Kneaded Bread) made us smaller sourdough baguettes to stick with our sourdough theme,” Watson says. “I messed around with it myself. It came out OK but that’s a whole other job and program. I’d be here another five hours a day just doing that! But it’s nice to support another business by having them make it for us.”

Watson likens the size of each sandwich to a Spanish bocadillo typically eaten in cafés and tapas bars. They’re a little more streamlined, or as Watson puts it, “you don’t have to dislocate your jaw to eat it.”

Don’t worry, though, these are still substantial sammies.

After opening Aux Delices and making the eatery a household name in Fairfield County, why wouldn’t Debra Ponzek want to open a new cafe to accommodate the busy shoppers, commuters and local Greenwich residents with the perfect place to grab a quick bite?

Located in the heart of Greenwich Avenue, Daily Cafe and Eatery serves the Greenwich community seven days a week with grab-and-go breakfast and lunch items, made with fresh ingredients catered to accommodate the hustle and bustle of everyday life. Coals Brings Grilled Pizza, Burgers, and Wings to Norwalk

Regulars of the Port Chester location of Coals Pizza got some bad news towards the end of 2020 when they announced December 30 would be their final day after eight years on N Main Street.

But in the case of Coals, when one location shuttered, another opened. In early February, they quietly debuted their third restaurant (their others are in Bronxville and Portland, Maine) in the former Fat Cat Pie Co. space in Norwalk.

According to Billy Etzel—who owns Coals along with Nick Restaino (whose wife, Blanca, steps in when he’s coaching baseball at Sacred Heart University), and Joe Rossi—opening in Norwalk was the plan way back when. “Nick lives in Norwalk and always kept his eyes open for a space and Fat Cat was available (after 16 years),” he says. “Way before we opened Port Chester, this was the first place we looked at before it was Fat Cat. Back then, we would have done what they did with wine and pizza.”

As far as why they left Port Chester, Etzel said it was a myriad of reasons including the redevelopment of the area where Coals PC occupied, plus the pandemic, but more so that it was time to move onto a new chapter.

Coals’ new chapter will only be new to those unfamiliar with what they became known for in the neighboring county, grilled pizza, wings, an award-winning burger, and a credible craft beer list.

“People know us because of the grilled pizza,” Etzel says. “What we do is food that most people consider simple food. We try to do it in the most ultimate way, and we put a lot of effort into that.”

This winter break I was unable to go on vacation due to COVID-19. However, the instant I walked into Raphaël’s Bakery in Greenwich, this snowy morning, I found I was able to catch a glimpse of France. The wonderful smells that immediately hit me as I opened the door, the beautiful pastries, and the delicious hot cocoa and baked goods, all were a treat to the senses.

Amidst the pandemic, Raphaël’s Bakery has brought an authentic French experience to Greenwich, Connecticut. Raphaël, a third-generation baker born in Brittany, France, and his wife Charlotte Dequeker finally had their dream become a reality when they opened their doors this past December.


Kissaki Opens In Greenwich with An Outstanding Sushi Experience

Kissaki has finally come to CT…Greenwich to be exact. The high end boutique sushi chain has earned accolades from Eater, The New York Times, The Wall Street Journal, and Crains, to name a few. Most recently the upscale and wildly popular sushi eatery shot into the spotlight on Page Six when comedian Jimmy Fallon left a $400 tip at the Watermill NY location. CTBites is thrilled to announce the restaurant’s Connecticut debut.

Kissaki is the latest in a slew of sushi and omakase joints now calling Greenwich home, but none, so far, has what this has - it’s got chutzpah. The Greenwich venue marks the restaurant’s 5th location after The Hamptons, Long Island City, The Bowery and Columbus Circle. There are plans for further expansion in the near future.

About a year ago I was invited to a press event at Tony’s at the J House in Greenwich, Connecticut which I covered for CTBites here. So when we were recently invited back to experience the new Miku Sushi Pop-up I was delighted.

The owners of MIKU SUSHI K Dong, and Chef Steve Chen, have created a special partnership with Tony Capasso, managing partner at Tony’s at the J House, to launch an all-new “elevated” sushi bar at the upscale steakhouse.

The MIKU x Tony’s pop-up is led by Executive Chef Joe Liu, former head sushi chef at Tao and Masa in Manhattan. The special menu features many of MIKU signature rolls as well as two new rolls, exclusive to Tony’s. The Tony Roll is made with bluefin toro, avocado, scallion and spicy lobster salad, and J House Roll with king salmon, avocado, wasabi sesame and spicy yellowtail.

Nuggets, cones, a Hotsy, and…LOBSTER ROLLS?!

That’s what’s been happening this summer at the O.G. Garden Catering location at their pop-up “Clam Shack,” where you can crush one of, or both versions of a lobster roll; Connecticut style, served warm with drawn butter or Maine style, served chilled, tossed in a mayo-based dressing with chopped scallions. Each is served on a buttered-and-griddled Martin’s Potato Roll.

And there’s more.

The Clam Shack’s expanded seafood menu includes a sizeable shrimp po’boy slathered with a homemade spicy remoulade, a New England shrimp salad roll, and a battered-and-fried clam strip roll. Clam strips are also offered as a platter with fries and coleslaw or just the strips in a one pound serving.


Grigg Street Pizza Opens in Greenwich with Artisan Sourdough Pies

Right off the busy Greenwich Avenue, is Grigg Street. There’s not much on it besides an independent bookstore, The Perfect Provenance’s parking lot, a soon-to-open coffee shop, and a basement level space that previously housed Lord of the Pies. The white tiled walls of the subterranean restaurant remain. But now they’re partially decked out with Jimi Hendrix, The Sex Pistols, and Pearl Jam posters that go along with the current residents’ eclectic, mostly rock playlist, a perfect soundtrack for Matthew Watson and Jon Corbo as they pound, stretch, spin, and roll dough at Grigg Street Pizza.

Pizza making is a switch up for the two longtime friends and Greenwich residents, who were formerly partners in the string of Corbo’s Deli locations. After the sold their part of the deli business they wanted to continue working together. “We missed that face-to-face interaction,” Watson says. “I’m making your food. I want that. We yearned for that feeling again.”

With pizza, they’re getting that again. But make no mistake, Grigg Street Pizza is no run-of-the-mill corner slice shop. Call it artisan if you want to. The philosophy here is quality ingredients and local ingredients whenever possible, using a few vendors, and to make everything, or damn near everything, in-house. “Nothing is coming out of a bottle. We’re making our salad dressing. We want everything to be legit,” Watson reveals.

Corbo interrupts to praise his friend. “This man can cook,” he says about Watson (who’s a French Culinary Institute grad). “I wanted to be a part of that. I don’t think anything we make, or very few things we make, have more than 4-5 ingredients. We want to let that shine.”

Some of those quality ingredients? Bianco DiNapoli Tomatoes for their red sauce, homemade mozzarella, and house-ground fennel sausage should you opt for it. A few drizzles to entice you and enhance your pie include habanero-garlic infused honey and roasted Chile de árbol hot oil.

And pizza, obviously, is the star of their show. Specifically…sourdough pizza. Each pie is full-sized, cooked in a gas oven, and spun carefully for an even char and well doneness. What they’re achieving here with the mother-based dough, with no commercial yeast, and naturally leavened for three days is a lightness that doesn’t make you feel too full. It’s crispy. It’s got a little chew.


MIKU SUSHI Launches a Pop-Up Sushi Bar at Tony’s At The J House in Greenwich

The owners of MIKU SUSHI on Greenwich Avenue, K Dong, and Chef Steve Chen, have partnered with Tony Capasso, managing partner at Tony’s at the J House, to launch an all-new “elevated” sushi bar at the trendy boutique hotel, J House, in Greenwich, Connecticut.

The MIKU x Tony’s pop-up is led by Executive Chef Joe Liu, former head sushi chef at Tao and Masa in Manhattan. Chef Liu trained uber master sushi Chef Daisuke Nakazawa, featured in the documentary film, Jiro Dreams of Sushi alongside world-renown master sushi chef, Jiro Ono.

The menu soft-launched this week and features almost a dozen of the MIKU signature rolls including two new exclusives, Tony Roll made with bluefin toro, avocado, scallion and spicy lobster salad, and J House Roll made with king salmon, avocado, wasabi sesame and spicy yellowtail.
