What’s better than sitting on your sofa, surrounded by lots snacks and watching the fittest athletes in the world compete for gold?! Why not throw a Winter Olympics Sochi Party? Here are our favorite Russian inspired recipes to enjoy while you watch the Opening Ceremonies on February 7th at 7:30 pm. So get your vodka chilled, and invite friends to come wearing their favorite ushanka (Russian hat). Read below for the following recipes: Russian Blini, Caviar Torte, Farshirovannye Yaytsa~ Stuffed Eggs, & a classic cocktail recipe, the White Russian.Russian Blini1 C. all-purpose flourPinch of salt3 eggs1 C. milk (more if needed)2 Tbs. melted unsalted butterMix together all the ingredients, except melted butter, stirring in enough milk to give batter the consistency of thin cream. Let stand for 30 minutesPlace a small amount of butter in a heated pan. Spoon in the batter by tablespoons. Wait until small bubbles form. Turn the blini to lightly brown the other side. Remove to a warm platter. Serve warm with crème fraiche and top with a dollop of caviar or the other optional toppings.Optional Topping Additions: smoked salmon, chopped hard-boiled eggs, minced red or white onion, chopped dill and lemon.Caviar Torte 12 hard-boiled eggs ¼ C. mayonnaise (or to your liking)1 Tbs. chopped dill4 oz. cream cheese¼ C. sour creamSalt and pepper2 - 4oz. jars good caviarCapers and chopped chives for garnish1 loaf of black bread, cut into trianglesCoarsely chop eggs and mix with mayo and until creamy. Add chopped dill, salt and pepper, to taste. Spread evenly in a platter with a ½ to 1 inch sides.Combine softened cream cheese with sour cream until smooth and creamy. Spread evenly over the egg layer. Spread a thin layer of caviar over the sour cream layer. Garnish with capers and chives. Serve with black bread and/or buttery toast points and enjoy this extra special treat!Farshirovannye Yaytsa~ Stuffed Eggs6 hardboiled eggs 3 Tbs. mayonnaise 1 Tbs. dry mustard 3 cornichon, finely chopped 2 Tbs. scallions, finely chopped 1 tsp. smoky paprika1 Tbs. capersOptional mix-ins: Crumbled Bacon& SrirachaCurry and Mango ChutneySmoked Salmon and DillBlack Olives and Sun Dried Tomato Peel the eggs and cut in half. Carefully remove the yolks and crush well. Mix with mayonnaise, mustard, pickles and scallions and season with salt and pepper. Using a spoon, fill the egg halves with the mixture, chill and garnish with capers and smoky paprika before serving.White RussianThis creamy vodka drink has a nice coffee flavor that makes the perfect après dinner drink.If you skip the cream you'll have a Black Russian, give the White Russian a shake at the end and you have a Dirty Bird, add a splash of amaretto and you have a Roasted Toasted Almond. Garnish with a few chocolate covered espresso beans.1 1/2 oz. vodka3/4 oz. Kahlua coffee liqueur3/4 oz. heavy creamChocolate covered espresso beansPour the ingredients into an old-fashioned glass filled with ice. Stir well and serve.
