We continue our merry Thanksgiving romp with a recipe from Marcia Selden Catering. The Seldens have cooked for, quite literally, thousands of hungry guests, and this is their go-to recipe for Butternut Squash & Apple Soup. It is incredibly simple to make and always a crowd pleaser. Make sure you garnish with the Pepitas. They add some nice texture to the creamy (dairy-free) soup.

Snow day: You’re rudely awakened at some ungodly hour by your phone informing you that yes, indeed, there is no school today.  Two thoughts run through your mind, “Great, I get to go back to sleep”, followed immediately by a more frightening thought, “I have to feed them all day?!”   Relax, we’ve got you covered even if you didn’t brave the market the day before to properly stock up on supplies. 

First things first, make yourself a cup of coffee, it’s going to be a loooong day.  Second, assess what you have in the house. 

Assuming you have some eggs, why not make these fun eggs in a cup to start the day? Then you can kick them out to shovel the driveway knowing at least they’re fueled up. Summer grilling is in full swing in CT, and with that in mind, Marcia Selden has shared a great recipe that leverages both Connecticut's proximity to some excellent seafood and our favorite culinary friend, the grill. A little flame goes a long way in this dish, Tamarind BBQ Swordfish & Pineapple Skewers. There is nothing better than grilled pineapple, and you can use the excess for a great cocktail. Enjoy!

Fall is the right time to get your squash on, and acorn squash is one of our favorites. Choose acorn squash that is heavy for its size, with a hard skin free of blemishes. Marcia Selden pairs this with the sweetness of a little maple vinaigrette, bringing out the flavor in the already desert-like squash.
