Fennel-Pear Salad RecipeIngredients:For the Salad1 Fennel, cut in half, core cut out, and sliced paper thin ½ Pear, sliced thin1 C Halved Green Grapes1 C Sliced Celery, cut on a long bias½ C Toasted Chopped Pecans1 C Julienned Celery Root2 T Fennel Fronds, plus extra for garnishFor the Vinaigrette:1 T Dijon Mustard4 T White Balsamic Vinegar1 t Sugar½ t Salt½ t White Pepper½ C Extra Virgin Olive Oil1 T Chopped ParsleyDirections:Toss all the ingredients for the salad in a bowl. For the vinaigrette, blend all ingredients aside from the parsley in a blender until emulsified. Then stir in the parsley. Drizzle the salad with the vinaigrette and serve.
