Fennel-Pear Salad with Grapes + Pecans via Marcia Selden
We couldn’t be happier that spring is here! Savor the season with this light and yummy Fennel-Pear Salad. It's packed with flavor and just takes a few minutes to prepare.
Fennel-Pear Salad Recipe
Ingredients:
For the Salad
1 Fennel, cut in half, core cut out, and sliced paper thin ½ Pear, sliced thin
1 C Halved Green Grapes
1 C Sliced Celery, cut on a long bias
½ C Toasted Chopped Pecans
1 C Julienned Celery Root
2 T Fennel Fronds, plus extra for garnish
For the Vinaigrette:
1 T Dijon Mustard
4 T White Balsamic Vinegar
1 t Sugar
½ t Salt
½ t White Pepper
½ C Extra Virgin Olive Oil
1 T Chopped Parsley
Directions:
Toss all the ingredients for the salad in a bowl.
For the vinaigrette, blend all ingredients aside from the parsley in a blender until emulsified. Then stir in the parsley. Drizzle the salad with the vinaigrette and serve.
