Marcia Selden Catering wants to share their favorite chopped salad recipe with you; chock full of color and crunch with kale as it’s main ingredient. This is not only scrumptious but it’s incredibly healthy.It’s best to let the kale “cook down” in the dressing for at least an hour. Raw kale can be a bit hard to digest.Marcia’s Best Salad Dressing1 C. extra virgin olive oil1 C. freshly squeezed lemon juice1 to 2 small garlic cloves, crushed1 Tbs. honey or agave or Dijon mustard1 tsp. Kosher saltfreshly ground black pepper, to taste Place all dressing ingredients into a large bowl, add kale and mix together until well combined.
