Crispy Melty Food Truck Opening Caseus Provisions Retail Spot in Wallingford April 1st

Award-winning and beloved Connecticut brand Caseus today announced the opening of its newest venture: Caseus Provisions, a brick-and-mortar specialty shop and grilled cheese to go counter at 619 Center Street in Wallingford, Connecticut. Known for its famous tomato soup, mouth-watering grilled cheese sandwiches and delicious treats from the Crispy Melty food truck (formerly The Caseus Cheese Truck), the new shop will offer its famous grilled cheeses made fresh to-go, cheese and charcuterie specialty platters and a highly curated shop of provisions including chocolates, pickles, vinegars, pastas and more. The specialty cheese shop and grilled cheese quick service restaurant will open on Saturday, April 1, 2023.

“As our truck continues to travel around the state and delight cheese lovers of all ages, our team was inspired to set up a permanent shop offering our beloved sandwiches, as well as our favorite products, meats and cheeses we feature in our iconic crispy, melty sandwiches,” said Jason Sobocinski, Caseus Provisions. “We are excited to be opening our doors in time for the busy Spring holiday season, helping customers take one thing off their busy to-do lists by offering cheese and charcuterie platters to go, and also celebrating National Grilled Cheese Day on Wednesday, April 12 by giving away 100 Crispy Melty Grilled Cheese to our customers that day!”

Open Wednesday-Saturday from 11am-7pm and Sundays 11am-4pm, the 600 square foot space will feature made-to-order to-go grilled cheeses including The Tartufo, The Pisano, The Garden and The Hog.

The Cheese and Charcuterie Specialty Platter menu, available by pre-order only, includes classic cheese platters serving 10-14 or 15-25, a charcuterie platter, and other custom order platters. Provisions featured in the shop will include items from Mystic Cheese Co., Cato Corner Farms, Arethusa Farms and European cheeses and provisions.
