Two Stamford Chefs Compete on Same Episode of Food Network’s, “Chopped”

Over the last several years, we’ve shared news with you about a handful of local chefs and restaurateurs who have competed on the Food Network’s competition show, “Chopped“.

Most notable have been Christian Petroni, Chef & co-owner of Fortina, who appeared as both a contestant and a judge.  Adam Greenberg, who was with Fortina when he first competed (and has since made his way to DC) competed on the show multiple times (coincidentally appearing again on December 5th).  And of course, there’s Aaron Sanchez,  a constant fixture on both “Chopped” and other Food Network shows.  You may recall Sanchez owned and operated Paloma in Harbor Point which has since closed their doors. On top of that, there’s also been a handful of local kids on the junior version of the show.

So that’s all pretty cool! But as far as I am aware, we’ve yet to see multiple Stamford chefs compete on the same show….. UNTIL NOW!

On December 7th, Stamford’s own, Steve Costanzo, owner & chef at Olio and Chef Jean J, chef & co-owner at Soul Tasty will put their culinary skills to the test on the SAME SHOW!

Tyler Anderson, the chef-owner of Millwright’s in Simsbury and co-owner of The Cook and the Bear in West Hartford, is about to add “Cheftestant” to his extensive resume.

 Anderson has been announced as one of 15 competitors on the newest season of "Top Chef," debuting Dec. 7 on Bravo. He is the first Connecticut chef to join the series, which is now in its 15th season. 

The new season is described as an "epic culinary adventure through the state of Colorado." "From deconstructing the Denver Omelet and preparing Rocky Mountain Oysters to tailgating with the Broncos, the level of competition for these 15 talented chefs is going to be a mile high. With the judges looking for the chefs' peak performances, the challenges will test the competitors' culinary abilities in picturesque locales."

After nine years, EMBODY FITNESS GOURMET has a new location in Darien, at the Palmer’s Market Shopping Center (380 Heights Road). This is one of three Embody grab-n-go healthy organic locations; the others residing in New Canaan and Westport. 

Embody is our go-to spot for protein shakes, juices, and salads. In Darien, they have also started serving Intelligentsia coffee--one of the top coffee roasters in the country. Embody's menu embraces all forms of lean proteins and nutrient dense vegetables and fruits in their menu creations, many of which pair well together allowing customers to mix and match items for an entire day's worth of nutrition. My personal favorite...The Almond Buzz, a perfect combination of almond butter, almond milk, bananas, cacao and protein powder.

The first hot rod movement was sparked by people who realized cast off objects still had plenty of potential. Kids walking to school in post WWII America passed junkyards where derelict Model T Fords, relics even then, baked in the sun. An after school job's income could net you one of those heaps, and with it came your first taste of independence. Dropping in a salvaged flathead V-8 could make that old bucket loud, fast, and dangerous. The sexy combination was like flypaper to teenagers and young veterans, and their creativity launched an American culture.

Newly opened PizzaCo, just across the street from Two Roads Brewing Company, is one such hot rod. Once the site of several thoroughly defunct gas stations, the old place has been cleaned up, given a new paint job, and had its own motor swap. The driving engine is now a Marra Forni oven. They call their pizza "Garage Fired," and PizzaCo's edge was hiring world champion Bruno DiFabio to create it.

You know that Bedford Square Building and Firehouse at 59 Post Road East in Westport that’s been under construction for a while? Well, it’s finally coming to fruition. On March 31, two occupants will crack the doors and open to the public, Anthropologie, and the place we’re here to talk about, Amis Trattoria. Why are we excited about this? Amis is owned by The Vetri Family, with Chef Marc Vetri at the helm, a chef who is widely regarded by his peers as one of the best Italian cooks in the U.S. If the whole women’s clothing and home décor concept and a restaurant opening in the same space seems confusing, well, there’s a story here.

With its new, 3 course prix fixe lunch, The National offers a commodity not always found along “The Ave” in Greenwich: a real bargain.

CTBites was recently invited to sample the new lunch menu, and we’ll fill you in on that delicious deal in a moment. But first, we wondered how the restaurant has evolved since it opened a year ago. So we asked owner and celebrity chef, Geoffrey Zakarian.

"We are never on auto pilot," the restaurateur told us. "And we always listen to the needs and wants of the customers. One change that people are loving is that we put French Fries on the menu. We started with homemade chips, but the fries are a huge hit. Sometimes, it is just those small things that people embrace."

Unassumingly tucked away amongst the store-fronts in downtown Fairfield is Catch a Healthy Habit. Maybe you’ve not been in a while…maybe you’ve never been at all, or you’ve been curious, but you’ve never been. The Cafe has been in Fairfield for over six years and in New Haven for two years prior to opening in Fairfield.

This casual, health-based, raw, gluten-free and vegan eatery focuses on clean eating. Their products are organic and non-GMO and the tastes and presentations are delicious and beautiful. They recently launched their new Spring/Summer menu and Stephanie Webster, armed with her camera, and I had the opportunity to stop in and sample some of the newest goodies to grace the menu. The food is gorgeously plated, visually stunning, allowing the naturally vibrant colors of spring to take center stage. As the weather heats up and we shed our outer layers we still need to satisfy our hunger without feeling weighted down.


CT Chef & Chopped Champion Silvia Baldini Competes Again On Food Network’s ‘Chopped Champion

Chef Silvia Baldini, Founder of New Canaan, CT based culinary group Strawberry and Sage, will compete again on Chopped Champion, the Food Network’s hit series. On April 19st at 10 pm, Baldini will be one of the 16 returning champions chosen to battle it out for a chance to earn the Chopped Champion title and $50,000 in prize money. Four preliminary rounds will determine who gets a spot in the finale. But only one chef from among the four finalists will be named the winner.

We recently gave you a sneak peek at Savor: A Celebration of Wine, Food, & Spirits, that will unfold in Hartford from April 7-9.  The event’s Grand Tasting will give guests the chance to try hundreds of wine, spirits, and beers, indulge in dishes from area restaurants, and watch celebrity chef demonstrations. 

Celebrity Chef Robert Irvine will headline the event while proceeds go toward the Robert Irvine foundation.  A few weeks ago, he spoke with CTBites and told us about the foundation, upcoming Food Network shows, his varied food projects, and what to expect this year.

Savor just announced another addition to its celebrity chef line-up: Chef Zac Young.  Fun, gregarious, and whimsical, Young currently works as the Executive Pastry Chef for the David Burke Restaurants.  I became a fan of his when I watched him compete on Top Chef: Just Desserts.  This past holiday season, his Thanksgiving “PieCaken” became a bona fide sensation.

There is a new King of the Hill of hamburgers in Greenwich.

Since celebrity chef Geoffrey Zakarian opened The National several months ago at the lower end of Greenwich Avenue, I have received numerous emails telling me about its burger. On a sunny day I ventured to Greenwich, grabbed a table and ordered “THE NATIONAL UGLY BURGER” which includes Cabot Cheddar cheese, crispy Shallots, Ntl Sauce, and served with malt vinegar chips. I ordered it medium-rare.

The burger arrived and it was served on a wooden cutting board, with a pickle speared through the top of the bun. The melted cheese was oozing around the edges, dripping towards the serving board. The sautéed shallots were peeking from under the cheese, partnered with the edges of a single lettuce leaf. If the taste was as good as the presentation, this would be a great burger. The burger was accompanied by the chips that were vertically arranged in a separate metal vase.

The National, the newest restaurant from celebrated chef, restaurateur, TV host, author, and philanthropist Geoffrey Zakarian, is now open in the heart of downtown Greenwich, at 376 Greenwich Avenue.

We were invited to sit down with the chef just 24 hours after he opened the doors to the public. Sitting in a corner banquette, our candid conversation spanned his 30-year career, including his love for Greenwich, formative culinary influences, and his advice for aspiring chefs.

The National feels like an extension of Zakarian himself. They both exude a studied yet casual New York elegance, are utterly charming, and yet quite approachable. A former Greenwich resident, it is no surprise he chose to open the restaurant within this community he knows so well. The modern american bistro feels at home on the Avenue and inside, boasts the welcoming charm of a neighborhood café with a seasonal menu positioned to please.

Carissa and Mike Hvizdo are passionate about what they do and passionate about the plant based juices, snacks, sandwiches and baked goods they serve at The Stand. Mike and Carissa met at a farmer’s market. After a bloggers’ tasting at Paloma in Stamford’s Harbor Point, CTBites sat down with Chef de Cuisine Chris Bateman to review the menu -- and his creative relationship with celebrity chef-owner Aarón Sánchez.

Bateman is a culinary prodigy. Fresh from CIA, the young chef opened Four Seasons Restaurants and Hotels around the world. So debuting Paloma last summer wasn’t his first big time rodeo. Sánchez may be its star, but Bateman runs the day-to-day show.

We wondered how much the celeb is involved in the creation of Paloma’s menu. “Very much,” Bateman replies. “We work closely. But he’s wide open to my ideas, and listens really well.”   The unshaven, still youthful chef, sporting jeans and a Yankee cap worn backwards, confides, “Aarón is the reason I’ve stayed here.  I love cooking with him.”
