When I sat down with Tim Topi to talk about his bakery’s expansion, and second location, this time in the form of a sit-down café, I jokingly told him that Wave Hill Breads could very well be the most mentioned place in the history of this website. It may not actually be a joke, though. Countless restaurants swear by Wave Hill and prominently feature their sourdough or burger buns on their menu and others have a deal with Topi’s bakery for custom loaves or buns. Off the top of my head? Damon Sawyer’s 29 Markle Ct uses their brioche buns, Jeff Taibe of Taproot serves Wave Hill sourdough with either butter or pimento cheese and bacon jam, Josie & Tony’s has them custom bake semolina for their terrific sandwiches, and they bake milk buns for Cwispy Chkn’s tasty fried chicken sliders. I’m sure I’m leaving out dozens more, but you get the idea.

There are cake people and there are pie people, but when it comes to holidays, Thanksgiving is all about the pie. Jackie Mendive, the founder of Empanadas On The Go, said her journey began by preparing empanadas for her family and friends. Mendiv grew up in Argentina, and she wanted to keep her upbringing and culture alive. Jackie says she would often think to herself, “I wish I could just order them online” since the actual preparation was extremely time-consuming. In January of 2017, she decided to begin selling her empanadas to local families. Since then, Empanadas On The Go has expanded to all of Fairfield County, Westchester County, as well as delivering to Manhattan and Brooklyn.

Donut Crazy Launches the “Cruffin” Croissant-Muffin Hybrid

Donut Crazy, a local, family-owned eatery specializing in unique donut flavors (lovingly called Dailies & Crazies), announced a tasty new menu item called the “Cruffin.” The croissant-muffin crossover is the company’s way of celebrating the first sugar-filled year of its New Haven location near Yale University. The “Cruffin” will be available at all Donut Crazy locations for $4.25, starting on Friday November 3, weekends only and while supplies last. 

The “Cruffin” has quickly become the food world’s newest bakery obsession, much like the “Cronut” before it. The buttery, flaky pastry is shaped like a muffin and filled with different flavors. Donut Crazy plans to offer coconut, dulce de leche, chocolate mousse, and pumpkin. More exciting flavors to come!

On certain mornings, the village of Georgetown smells as if it was baked inside a loaf of bread. That was my initial thought when attempting to track down local baker Rob VanKeuren. I had the address, but wasn’t certain where he was exactly. My “Where are you?” messages went unanswered, although not on purpose, the guy was wrapped up in baking. A cluster of mailboxes and my own lack of sleep the night before combined for confusion and I ended up in a driveway, still sniffing the air, and I was greeted by a tiger-striped cat, then a kid. I asked if he knew where I could find “the guy that bakes bread.” He brought my question to his mom and returned with, “Go to Lombardi’s. A right turn out of the driveway and immediately on your right.”

Of the many immigrant groups that have shaped the state of Connecticut throughout the decades and centuries, the Polish have been among the most prominent. (And not just in New Britain!) On Main Street in Ansonia, across the street from the Europol Deli (where you can take home a full Polish dinner) is Eddy’s Bake Shop, where one can find one of the state’s most popular versions of the Polish delicacy, paczki (pronounced PUNCH-key). Resembling a doughnut, the paczki is traditionally stuffed with a filling, such as a jam or custard. So beloved in Ansonia and the Naugatuck Valley is Eddy’s paczki, that every February the bakery hosts a paczki-eating contest, in which contestants have five minutes to eat as many as possible.

What do brownies and superfoods have in common? Some of you might jump up and shout, “Why chocolate, of course!” while the rest of you might scratch your heads and wonder. What if I told you that the Free & Company Kitchen’s incredible baked goods are all super-food based? Additionally, every one of their items is gluten, dairy and refined sugar-free, sweetened only with organic maple syrup. Some of their products are also egg and nut-free. For those of you with food sensitivities or who have children who do, this small, newly launched company should be on your radar. It should also be noted that these edibles aren’t for just vegetarians, vegans or celiac patients; they’re truly for everyone. 

Founded on the premise that snacks can be familiar and comforting and still good for you, Chef Lynne Pasquale sets out to prove this possible one brownie at a time. She has, so far, won over even the most discerning of palates, myself included. 

I met with Chef Pasquale at her bakery last week where we had a chance to chat.

Forever Sweet Bakery is celebrating its third anniversary as one of the most creative bakeries for cupcakes, cake pops, and special occasion themed cakes. Located off the beaten path in a strip mall on New Canaan Avenue in Norwalk, CTbites visited on opening day several years ago and over the last three years the bakery has received numerous accolades including the 2014 & 2015 Best of the Gold Coast Cupcakes. This summer marks the 10 year anniversary for Sono Baking Company. To celebrate the milestone of this beloved local bakery, we sat down with owner, John Barricelli, to talk about the business of baking and his plans for the future.  

What made you decide to launch Sono Baking Company? 

We launched Sono 10 years ago because we found that the need for baked goods and breads were hard to find in this area....everything was being brought up from the city....I always wanted to bake bread in a big oven early in the morning with no days off!

Has the business of baking changed in the past 10 year? How?

The business has not changed, but competition has grown a little....we still think we are superior to anything out there...we bake fresh everyday....bake locally, distribute locally.

Michelle Jaffee is up and in her new home away from home at 75 Hillside Road long before the sun comes up. There, she’s busily getting ready for the day ahead creating delightful treats for her wholesale clients as well as the for her new SWEET & SIMPLE BAKERY. You may have seen her brand at your local retail grocer, but now Michelle has a storefront of her own, and her selection of cookies, brownies and cakes, which are available on a rotating basis, is growing daily. 

Cookies include, but are not limited to, chocolate chip, oatmeal, peanut butter, sugar, almond butter and thumbprints. SoNo Market Place Opens December 1st in Norwalk

A week prior to the official opening on Saturday December 1st, SoNo Market Place decided to sponsor a soft opening on November 23rd and I decided that tasting some good local food was a whole lot better than fighting the crowds at the mall.

All of the food purveyors were in full test-mode and my first stop was Flat White Coffee to taste the coffee described to CTbites by owner, John Palino, back in September. This was a creamy blend of rich coffee and steamed milk, a brand brought over from New Zealand, and one that should meet with great success in CT. 

But it's not just about coffee at SoNo Market Place. With over 20 food vendors and eateries, this European style market is poised to be a foodie destination. Guests lined up at Wise Guys Pizza for New Haven style pies; Norm Bloom served up fresh oysters and clams straight from the Norwalk waters, and Fish & Chips were on the menu from Gotta Nibble.  Caterering company, Festivities, has a permananet spot here with their take-out biz, "Party Express." Local specialty purveyors and well known brands such as Knipschildt ChocolatierWave Hill Breads, and Nothin' But Granola have also opened shop at the market.

Every so often the fine art of sampling in grocery stores uncovers a delicious new product. While shopping last week in Fairway Market in Stamford I stumbled across a local business, You&Me Cookie, that is creating three scrumptious versions of old-time favorite cookie recipes: the original Chocolate Chip, a Cranberry and Dark Chocolate Chunk, and a modern version of an old-fashioned Oatmeal Raisin. I sampled and loved all of the varieties. With one bite I knew I had an obligation to let our readers know that You&Me Cookies are now available in Fairfield County. After two years of successfully selling through specialty stores in Westchester County, co-owners Heather Mahland and Kyle deLasa have expanded their distribution with the addition of Walter Stewarts in New Canaan, and Plum Pure Food, Starlight Café at the YMCA and Caffé Bon in Greenwich.

When husband and wife team Margaret Sapir and Mitch Rapaport first began delivering their signature bread to farmers markets in 2005, it was with a signature bread crafted from one recipe. Not that this has been a bad thing. Their Pain de Campagne is what started it all and has brought them the recognition they receive to this day.

The Flaxette Debuts @ The Dressing Room

Last spring we reported on a new local artisan bread baker, Fairfield Bread Company. Their wonderful Flaxette is made with organic flax and whole wheat, using slow, old-world methods. The result...a hearty loaf with a delightful caramelized crust and a tender chewy crumb.

This small-batch artisan bread is making its restaurant debut at The Dressing Room on their new lunch menu with four new sandwich offerings including: DR Steak and cheese with grass-fed beef and Nobel cheddar sauce, Pulled pork with root vegetable BBQ sauce,  and a Roasted organic vegetable sandwich- all on the Flaxette. Executive Chef, Jon Vaast, describes his excitement about this menu addition: 

"The Flaxette for sandwiches is really something else, it grills great, and holds up to the different sandwiches we are doing right now. It's just a really great hearty loaf of bread which is what makes a great sandwich."


Scratch Baking Debuts in Milford

Chances are pretty good that if you’ve ever lusted after a baked good in Fairfield County, Lesli Flick of Milford's newest bakery Scratch Baking may have literally had her hands on it. Scratch is a beacon of baked goods, opening in a cozy space adjacent to the Milford train station just this past weekend with seasoned pastry chef Lesli Flick at its helm.

Flick has been moving steadily north since attending culinary school in Manhattan, beginning her baking trajectory on the upper east side and then (thankfully for us) moving to Connecticut.
